These well-seasoned baked potatoes are a fun alternative to plain baked potatoes. It's easy to help yourself to just the amount you want, too, since the potato halves are scored into sections. My mom serves them alongside any meat.

Scored Potatoes Recipe
  • Prep: 10 min. Bake: 50 min.
  • Yield: 4 Servings

Ingredients

  • 4 large baking potatoes
  • 2 tablespoons butter, melted, divided
  • 1/8 teaspoon paprika
  • 1 tablespoon minced fresh parsley
  • Salt and pepper to taste

Directions

  • With a sharp knife, cut potatoes in half lengthwise. Slice each half widthwise six times, but not all the way through; fan potatoes slightly.
  • Place in a shallow baking dish. Brush potatoes with 1 tablespoon butter. Sprinkle with paprika, parsley, salt and pepper. Bake, uncovered, at 350° for 50 minutes or until tender. Drizzle with remaining butter. Yield: 4 servings.

I like how the potatoes were scored, but the flavor wasn't very exciting. It needs something else to make it more flavorful.

This recipe was awesome. I ended up using a little bit more butter and different seasoning due to allergies I have. But they were great. Very easy and very fast in prep. We have a big family and I made triple this and everyone loved them even my picky kids. Thank you for sharing your recipe.

Love these- simple and easy and taste great. Very easy to personalize how you want. I added garlic salt and used more butter than called for. Will definitely make these again.

The idea of the scores in the potatoes is such a brilliant idea. It helps the seasoning to get into the potato itself and not just on the outside. It nice when you put lots of butter and seasoning. Its well loved. Thanks for the idea ...

I've made this recipe twice and we love it. It can be prepared earlier in the day and baked later. Good for saving time and a great change from baked or mashed potatoes.

These looks good, will make them for supper tonight. I'm going to use garlic butter instead of regular butter.. see how they turn out.

I did follow one "raters" idea of topping these with diced bacon. It was the only flavor we could taste ! These are pretty bland otherwise. They also needed much more time than the 50miutes suggested. I had to put them in for 50 minutes and increase the temperature to 375.... and they were still hard. So , I finished them off in the microwave for three minutes. Sorry... no one in the family cared for this recipe.

Forgto to mention to spray baking dish with cooking spray to make removng much easier.
