These well-seasoned baked potatoes are a fun alternative to plain baked potatoes. It's easy to help yourself to just the amount you want, too, since the potato halves are scored into sections. My mom serves them alongside any meat.

Scored Potatoes Recipe

Ingredients

  • 4 large baking potatoes
  • 2 tablespoons butter, melted, divided
  • 1/8 teaspoon paprika
  • 1 tablespoon minced fresh parsley
  • Salt and pepper to taste

Directions

  • With a sharp knife, cut potatoes in half lengthwise. Slice each half widthwise six times, but not all the way through; fan potatoes slightly.
  • Place in a shallow baking dish. Brush potatoes with 1 tablespoon butter. Sprinkle with paprika, parsley, salt and pepper. Bake, uncovered, at 350° for 50 minutes or until tender. Drizzle with remaining butter. Yield: 4 servings.

I added a few other herbs and some garlic powder :) Very easy and a cute way to spice up a regular dish to make it into something just a little different.

I made these tonight and they were pretty good. For some reason, I had trouble cutting them evenly, so some were thicker than others and had to be finished in the microwave. (Although I realize the fault is mine, not the recipes...it was just harder to put together than I thought it would be.) They had good flavor. I ended up using all the melted butter (actually I used margarine) before putting them in the oven, and no one thought they needed more after. I used parsley flakes, as I didn't have any fresh on hand. I also sprinkled garlic powder on them. Pretty tasty!
