We have so much squash in the summer, but we never tire of this recipe. We often leave the sausage out of the foil packets and just serve the veggies as a side dish. Even people who don't usually like zucchini enjoy it. —Kay Bish, Thompsonville, Illinois

Sausage Vegetable Packets Recipe

Prep: 20 min. Grill: 25 min.

Yield: 4 Servings

Ingredients

1/2 pound smoked sausage, cut into 1/2-inch pieces
3 medium zucchini, sliced
3 medium tomatoes, sliced
1 medium green pepper, julienned
1/4 cup butter, melted
1 envelope onion soup mix
1 tablespoon brown sugar
1/4 teaspoon salt
1/4 teaspoon pepper

Directions

In a large bowl, combine all the ingredients. Divide between two pieces of double-layered heavy-duty foil (about 12-in. square). Fold foil around sausage mixture and seal tightly.
Grill, covered, over medium heat for 25-30 minutes or until the vegetables are tender. Open foil carefully to allow steam to escape. Yield: 4 servings.

My family loves this recipe. It's always a big hit. I sometimes use andouille sausage for the people who like spicy food.

when I make these packets with veggies, I always add a couple ice cubes for moisture and less butter/use PAM to spray my foil. I do turn mine, but double wrap the veggies and roll the edges together so they do not leak. Make these often during the summer months - great with or without the sausage. ..also use Kielbasa

I make a recipe similar to this and spray the foil with Pam first. Then I can use less butter, but it still tastes great and doesn't stick to the regular foil.

This was very good. I did use the nonstick foil and it was no problem.

This was tasty, and easy to prepare, however, I found it stuck to my foil. I did use a double thickness of heavy duty foil but I think non-stick foil would have worked better. The recipe did not say to turn it but I did and perhaps this was the problem since the butter tended to escape from the sealed edges. I guess it was not worth the effort to remove it from the foil; so I probably won't prepare it again.

This was very good. I lightened it up a little by using only 2 tablespoons of butter. Also when I put it on the grill, I turned it to low. When I came back to checkthe packets at 20 minutes, my gas had run out. I opened one packet to check on it and thought the vegetables were done enough and it was hot throughout.
