this was YUMMO ... i used andouille sausage and it added just enough 'kick' to make it more than just another potato soup!!

Tried this tonite for the first time. Delicious! The only thing I added was sauteed onion and fresh dill. Very tasty. Will be making again.

This was sooo tasty! I modified it a bit using Almond Milk instead and it tasted ah-mazing! Just a hint of sweetness from the milk and then I ended up dumping the whole bag of shredded cheese into the pot (why not?!). It only called for a cup and a half of broth but since I didn't have large enough saucepan for this I doubled the broth to cover the veggies in my large pot. I can't wait to make this recipe again! Definitely a favorite now!
