Ingredients:

  • 2 eggs
  • 1/4 cup heavy cream
  • 1/4 cup cornmeal
  • 2 tablespoons sliced green onions
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • Pinch pepper
  • 1/2 teaspoon salt, optional
  • 1 can (14-3/4 ounces) salmon, drained, skinned and boned
  • 1 to 2 tablespoons butter or margarine

Directions:

In a medium bowl, beat the eggs. Add cream, cornmeal, green onions, flour, baking powder, pepper and salt if desired. Flake salmon into bowl; blend gently. Melt butter in a skillet or griddle; drop salmon mixture by 1/3 cupfuls and fry over medium heat for 5 minutes per side or until lightly browned. Serve hot. Yield: 3-4 servings (six patties)
