Sage Meat Loaf Recipe

Ingredients

  • 1 egg, lightly beaten
  • 2/3 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 cup crushed saltines
  • 1/4 cup finely chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon rubbed sage
  • 1/4 teaspoon pepper
  • 1-1/2 pounds ground beef
  • 1/4 cup ketchup
  • 3 tablespoons brown sugar
  • 1 teaspoon ground mustard
  • 1/4 teaspoon ground nutmeg

Directions

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Pat meat mixture into an ungreased 9-in. x 5-in. loaf pan. Bake, uncovered, at 350° for 50 minutes.
  • Combine the ketchup, brown sugar, mustard and nutmeg; spread over top. Bake 15-20 minutes longer or until meat is no longer pink and a meat thermometer reads 160°. Let stand for 10 minutes before slicing. Yield: 6 servings.

Tip

No More Tears

To reduce tears while cutting onions, freeze onions for 20 minutes before chopping. Also, use a very sharp knife when chopping onions and chop quickly. You can save both time and tears by chopping many onions at once. Freeze the extras in an airtight container for up to 3 months. (Before sauteing, thaw the onions and pat them dry. Frozen chopped onions can be added directly to soups or casseroles.)

I found this recipe, just ok. A better recipe is "Slow cooked Meat Loaf" from QuickCooking,Mar of 98. I exchanged the 2 slices of bread in that recipe for soda crackers, 1 cup. Also you cook carrots and potatoes along with it for one pot dinner!

It was okay but not awesome

This made a nice flavorful moist meatloaf. I did find it stuck to the pan though so next time I will grease the pan. We did not add the topping because we don't like the sweet ketchup type toppings...we just left our plain, although next time I just might have to try the gravy suggestion another reviewer mentioned. Thanks TOH, for another great homestyle recipe!

Whenever I make meatloaf I use celery salt in place of the regular salt. This gave this recipe the seasoning I felt it needed. Will certainly make it again!

This is my go to recipe for meatloaf every time! My husband doesn't like a ketchup based sauce, so I substitute canned gravy & it's delicious.

VERY GOOD Recipe....Everyone begs for this recipe. I dont add the sage and I add a tiny little bit of tobascco sauce. It doesn't make it spicy, the heat cooks the spicy out but gives it a little extra flavor. I add maybe 10 drops. the sauce is a little sweet but we all enjoyed it anyways.

VERY GOOD!!! I've made it so many times. I don't add the sage anymore. My kids and husband like it better without the sage. Topping is great!

My husband and I really liked this meat loaf, except we found the topping too sweet! I had already cut the brown sugar in half, but it was still too sweet. For the meat I used half ground bison and half beef and also added one-third to half a cup of grated carrots. I will make it again with less sugar.

This was okay, not horrible, but I won't make it again. It just didn't have a lot of flavor. I did like the sauce for on top of the meatloaf.
