Rumaki Appetizers Recipe
  • Prep: 30 min. Broil: 10 min.
  • Yield: 39 Servings

Ingredients

  • 1 cup packed brown sugar
  • 1/2 cup mayonnaise
  • 1/2 cup chili sauce
  • 13 bacon strips, cut into thirds
  • 1 can (8 ounces) whole water chestnuts, drained
  • 1 can (8 ounces) pineapple chunks, drained

Directions

  • In a small saucepan, combine the brown sugar, mayonnaise and chili sauce. Cook and stir until mixture comes to a boil; set aside. Wrap a bacon piece around water chestnut and pineapple; secure with a toothpick. Broil until bacon is crisp, about 5 minutes; turn. Broil 4 minutes longer or until bacon is crisp. Serve with sauce. Yield: 39 appetizers.

Nutritional Facts 1 appetizer equals 61 calories, 3 g fat (1 g saturated fat), 3 mg cholesterol, 114 mg sodium, 8 g carbohydrate, trace fiber, 1 g protein. Diabetic Exchanges: 1/2 starch, 1/2 fat.
