RED-NOSED CAKES are what Karen quickly cooked up for the youngsters at her child's school. "Our son needed reindeer treats for his class but forgot to tell me abut it until the day before," recalls Karen. "It's the sort of situation that every mother finds herself in at one time or another!" With no ready-made decorations on hand, Karen had to improvise. "We stuck animal crackers in the cupcakes for antlers and used other sweets for the eyes and noses," she tells. "All the students loved them." Her fast creations are helpful when you have lots of other preparations for a party. "And they're easy enough for children to help with, too," notes Karen.

Rudolph Cupcakes Recipe
  • Prep: 20 min. Bake: 25 min. + cooling

Ingredients

  • 1 package cake mix of your choice (regular size)
  • 1 can (16 ounces) chocolate frosting
  • 48 animal crackers
  • 24 miniature marshmallows, halved
  • 48 miniature chocolate chips or raisins
  • 24 red jelly beans

Directions

  • Prepare and bake cake according to package directions for cupcakes, using foil or paper-lined muffin cups. Cool for 10 minutes before removing from pans to wire racks to cool completely.
  • Frost cupcake tops. Insert two animal crackers into each cupcake for antlers. For the eyes, place two marshmallow halves, cut side up, with a chocolate chip in the center of each. Add a jelly bean for nose. Yield: 2 dozen.

My nephew and his class loved this cupcakes or pupcakes as my nephew calls them. They turn out super cute. They were a hit. Also I used cherry sours for the noses since i couldn't find red jelly beans.

I used broken pieces of pretzels instead of animal crackers for antlers because I couldn't get the animal crackers to stand up. I also used chocolate chips for eyes because adding the dollops to the halfed mini marshmallows was tough.

I made these for my families christmas party where we have 12 kids age 10 and under - what a hit. I used premade christmas cookies from the store that we in the shape of a star and had colored sugar on them. Cut in half, they looked like anthlers. for the nose, I used red cinnamon candy that I already had from baking other holiday cookies. My son got a great kick out of helping me and we thought each cupcake took on it's own personality. They did not last long - These a great!!

My son and I made them for his cubscout Christmas party. They were a hit and were gone in 5 minutes. We substituted pretzels for the antlers and mouth.

Oh, PS. Freeze the cupcakes before frosting. Your frosting goes on much smoother.

I didn't like the animal cracker idea. In order to get the effect, you need to use animal crackers that have the animal imprint and in my area, they're either very difficult to find or the quantity I needed was cost prohibitive. The store I shopped at had a huge bag of "generic" animal cookies but you need the ones imprinted with animal (not just in the shape of the animal) for the effect. In a pinch we used pretzels and that worked fine. We did not use marshmallows. We used the squirty icing for the eyes and red hots for the nose. So we mostly followed the recipe but when certain obstacles got in the way, time, aquiring certain components, we improvised. The recipe was still a total hit.

If you don't care for marshmellow than whip a small batch of buttercream frost and use a pastry bag anad writing tip to make an eye! If you don't have a pastry tip place icing in a sandwich bag and cut the tip off the bottom corner and sqeeze to make eyes. For the nose you can also use any kind of red candies. M&M's. red hots or color some of the buttercream frosting red and use the same method to apply  it. Good luck! If you need anymore help or ideas feel free to e-mail me . I don't like marshmellows either. You could try buying a tube of white icing and using that for the eyes.
