Root Beer Float Pie Recipe
  • Prep: 15 min. + chilling
  • Yield: 8 Servings

Ingredients

  • 1 carton (8 ounces) frozen reduced-fat whipped topping, thawed, divided
  • 3/4 cup cold diet root beer
  • 1/2 cup fat-free milk
  • 1 package (1 ounce) sugar-free instant vanilla pudding mix
  • 1 graham cracker crust (9 inches)
  • Maraschino cherries, optional

Directions

  • Set aside and refrigerate 1/2 cup whipped topping for garnish. In a large bowl, whisk the root beer, milk and pudding mix for 2 minutes. Fold in half of the remaining whipped topping. Spread into graham cracker crust.
  • Spread remaining whipped topping over pie. Refrigerate for at least 8 hours or overnight.
  • Dollop reserved whipped topping over each serving; top with a maraschino cherry if desired. Yield: 8 servings.

Nutritional Facts 1 piece equals 185 calories, 8 g fat (4 g saturated fat), trace cholesterol, 275 mg sodium, 27 g carbohydrate, trace fiber, 1 g protein. Diabetic Exchanges: 2 starch, 1 fat.

I made this using regular root beer,pudding and whole milk.It didn't set up very well but it still tasted good. I put it in the freezer overnight and it was cool and creamy. I would recommend to put it in the freezer a few hours before serving.

OK, so all sugar free puddings come in 1.7oz. pkgs. Using this size and the liquid stated, along with the other ingredients, will set up the pie. I had no issues. Very good. Let the root beer sit, to get rid of the fizz too, as it may be a reason for not setting up.

I used regular instant pudding mix. I doubled the recipe to make 2 pies, as I was taking them to a potluck. But after quite a few hours in the fridge it became obvious to me that this just wasn't going to set up. It would be a sloppy mess. I had expended quite a bit of time and effort making gluten free crumb crusts, so I wanted the pies to be eaten. I decided to freeze them. I was so glad I did. They cut perfectly and, to tell the truth, I think I like them better frozen than as a cream pie. They give the taste of a real root beer float made with ice cream. Every bit of the 2 pies was eaten. I will definitely be making them again and again. A nice refreshing summer dessert with real root beer flavor!

I made this for Father's Day and it was a hit! It was a little soupy but tasted so good that no one cared. Next time I plan to add more pudding. I have even considered trying it in a chocolate crust. As is, the flavor is excellent!

This is the second time I make this pie. I used two boxes of regular instant pudding, 1 cup of half & half and regular root beer. I added the milk and root beer a little at a time, so it didn't get too soupy. Sets up very quickly. Everyone loves it.

After reading the comments here, we wanted to clarify a few things with this recipe. The 1 ounce box of pudding is the instant sugar-free fat-free version. If that can't be found, a 3.4 ounce box of regular pudding could be substituted but use the whole box (not 1 ounce). Other regular ingredients can also be substituted for the reduced-fat or diet products in this recipe, but remember the Nutritional Facts will not pertain then.

When made as written, this pie will be slightly soft-set after 8 hours or overnight in the refrigerator but should still cut OK.

I did not make this recipe (yet!) but after reading the reviews, I compared this recipe to my "ice box eclair cake" recipe, which uses similar ingrediants, except it calls for 2 packs of pudding. So either the milk or root beer should be decreased, or another pack of pudding added. I plan to make this in the next 2 weeks, so will update my results then.

After reading other reviews I see I am not alone...the pie was great tasting but would not set up. Does anyone have a suggestion how to make it set up? It was really soupy. I made it for my father on Father's Day, as he loves root beer floats, went to serve it to the family and it was a disaster but yummy! Doesn't look like the picture, how can we make it look like the picture?

Great Taste but the pie would not set firm after 18 hours in the fridge. Something is missing from the recipe?? Maybe some clear gelatin added to the mix? The quality of the root beer plays a big role in the flavor.

This got RAVE reviews from my family and some friends we had over for supper. I wish I had made two! When I make this again, I'll make sure to leave it in the fridge overnight. It was in the fridge for 8 hours during the day, but it still competely fell apart when I took it out. Maybe it needs 12 hours to get really firm? I don't know but it sure was good! Oh, also, I'd make it with 1 cup of root beer instead of 3/4 cup--just to add more of a root beer taste. I used regular root beer.
