Roasted Parmesan Green Beans Recipe

Ingredients

  • 1 pound fresh green beans, trimmed
  • 2 teaspoons olive oil
  • 1-1/2 teaspoons Greek seasoning
  • 2 tablespoons shredded Parmesan cheese

Directions

  • Place beans in a 15-in. x 10-in. x 1-in. baking pan coated with cooking spray. Drizzle with oil. Sprinkle with seasoning; stir to coat.
  • Bake, uncovered, at 425° for 12-15 minutes or until beans are tender, stirring once. Sprinkle with cheese. Yield: 4 servings.

Nutritional Facts 2/3 cup equals 61 calories, 3 g fat (1 g saturated fat), 2 mg cholesterol, 410 mg sodium, 7 g carbohydrate, 3 g fiber, 3 g protein. Diabetic Exchanges: 1 vegetable, 1/2 fat.

Parmesan Pointers

When a recipe calls for shredded Parmesan cheese, use the cheese found in bags in the grocery store dairy section. Shredded Parmesan is often used in salads or soups where the shreds make a pretty garnish. If grated Parmesan is called for, use the finely grated cheese sold in containers with shaker/pourer tops. This type works well in lasagna and casseroles. (You can substitute either shredded or grated Parmesan in equal proportions in your favorite recipes.) If you decide to buy a chunk of Parmesan cheese and grate your own, be sure to use the finest section on your grating tool. You can also use a blender or food processor. Simply cut the cheese into 1-inch cubes and process 1 cup of cubes at a time on high until finely grated.

So good!! My family loves this side dish. Even my 5yr old grandaughter gobbles them up.

These were awesome! Great for all those green beans from your garden. Greek Seasoning is hard to find in the spice isle and has lots of sodium. But I found it and will use less sodium version next time.

It is low carb too and I had it with the TOH Glazed Pork Chops (low carb too) and ciabatta bread w/ dipping sauce. A great combination.

Great side dish. My husband is not a fan of plain green beans (he likes the casserole), but her gobbled this up. I added a sprinkle of paprika before I put it in the oven, nice touch.
