Roasted Garlic Omelet Recipe

Ingredients

  • 1/4 teaspoons hot red pepper flakes
  • 1 tablespoon unsalted butter
  • 4 garlic cloves, roasted, peeled, and mashed
  • 8 eggs
  • 1/4 cup cold water
  • 1/2 teaspoons salt
  • 1/4 teaspoons black pepper
  • 1 tablespoon vegetable oil, to taste

Directions

  • To roast garlic: Preheat oven to 350°F. Slice tops off garlic, wrap loosely in aluminum foil, bake for 20 to 30 minutes.
  • In large bowl, whisk eggs, water, mashed garlic, salt, and pepper.
  • In large, non-stick skillet, combine oil and butter. Heat over medium-high.
  • Pour egg mixture into heated skillet.
  • When eggs are set, fold omelet in half and remove from heat.
  • Transfer to serving dish. Sprinkle with red pepper flakes to taste. Cut into 4 pieces. Serve.
