Roasted Carrot Fries Recipe

Ingredients

  • 1 pound fresh carrots, cut into 1/2-inch sticks
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt

Directions

  • Place carrots in a greased 15-in. x 10-in. x 1-in. baking pan. Drizzle with oil and sprinkle with salt; toss to coat. Bake, uncovered, at 450° for 10-12 minutes or until crisp-tender. Yield: 5 servings.

Nutritional Facts 1/2 cup equals 53 calories, 2 g fat (trace saturated fat), 0 cholesterol, 299 mg sodium, 9 g carbohydrate, 3 g fiber, 1 g protein. Diabetic Exchange: 2 vegetable.

A fun way to eat carrots!

These were good, but they kind of messed with my brain because they look like sweet potato fries, but taste like carrots. They were good dipped in ranch.

I also sprinkled a little cinnamon and sugar on, as I pulled them piping hot out of the oven. The family LOVED it! Great way to get the little ones to eat their carrots!
