Roadside Diner Cheeseburger Quiche Recipe

Ingredients

  • 1 sheet refrigerated pie pastry
  • 3/4 pound ground beef
  • 2 plum tomatoes, seeded and chopped
  • 1 medium onion, chopped
  • 1/2 cup dill pickle relish
  • 1/2 cup crumbled cooked bacon
  • 5 eggs
  • 1 cup heavy whipping cream
  • 1/2 cup 2% milk
  • 2 teaspoons prepared mustard
  • 1 teaspoon hot pepper sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1-1/2 cups (6 ounces) shredded cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • Optional garnishes: mayonnaise, additional pickle relish, crumbled cooked bacon, and chopped onion and tomato

Directions

  • Unroll pastry into a 9-in. deep-dish pie plate; flute edges and set aside. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the tomatoes, onion, relish and bacon. Transfer to prepared pastry.
  • In a large bowl, whisk the eggs, cream, milk, mustard, pepper sauce, salt and pepper. Pour over beef mixture. Sprinkle with cheeses.
  • Bake at 375° for 50-60 minutes or until a knife inserted near the center comes out clean. Cover edges with foil during the last 15 minutes to prevent overbrowning if necessary. Let stand for 10 minutes before cutting. Garnish with optional ingredients if desired. Yield: 8 servings.

I used ground turkey, regular tomatoes and fat free half and half. It turned out very good.

I was afraid this would be too stodgy, but it was very tasty and filling and not as heavy as I expected. Due to availability, I used very lean beef, half and half instead of cream and milk, and less cheese than called for. It was still a hit! Good recipe that's easy to adjust to your tastes or dietary needs.

This one's a keeper! I used frozen pie crusts and got two pies. They took 50 minutes to bake to perfection. Also added more cheese to cover top of two pies. Next time I would take the advice to use a well-drained can of Rotel tomatoes with chilies and perhaps cut down on the relish...or not.

This was very easy to make and a nice change from the ordinary. I used mushrooms instead of tomatoes and low fat sharp cheddar cheese and omitted the cream. Will definitely make again.

This is a great recipe. Will definately make it again. However, just don't understand why some cooks think that low fat this and reduced fat that is better for them. Would you rather have natural or taken apart and put back together foods?

Good as is BUT-too many calories and fat for me sooo...1/2 lb very lean beef, 4 strips bacon (or skip it entirely), 1 can evaporated skim milk + 1/2 c. 2, 1 c. reduced fat sharp cheddar. Cuts a bit of fat/calories w/out sacrificing taste.

We loved this recipe! I was making the same meal to share with another household, so I sort of doubled the recipe. And sort of not!

I used 2 pie shells (homemade), one regular and one gluten free. I did not double the hamburger, but used just under half a pound in each quiche. Even less would have worked out fine. I used real bacon bits instead of bacon. I used fat-free half and half, quite a bit less of it. I think I used 1 cup of the half and half, plus 1/2 cup of 2% milk, for the 2 quiches. It was plenty. I also used less cheese, and less dill relish (only because I ran out of dill relish).

It came out fantastic and I will definitely make this often. A great recipe!

I love this recipe and have made it several times. It is a very heavy though. I use half and half, less bacon and less cheese. These changes have made it a lot better.

Very tasty. I did vary it by using a can of well drained Rotel tomatoes because I was out of fresh tomatoes. It gave it an extra zing. The second time I made this, I used sausage and a bit of ham for a breakfast quiche. It was so good with the canned tomatoes & hot peppers, that I used that again instead of fresh. Thank you for this very versitile recipe.

We have made this several times with a few minor variations to it. For example, I feel it tastes better with bacon bits than real bacon. ALSO--chefs, please note--when we used exact amounts of milk/cream, it overflowed was TOO much. So you may need to make your own variations accordingly. One way to avoid overflow is a half pound of ground beef instead of 3/4. Another option is to make the entire mixture and pour the overflow into a container and freeze it to save to make a second pie. This is awesome. People with lowt hyroid--this is clearly a thyroid revving recipe. It makes me feel somuch beter I am hooked on this my staff has to cook it for me at least once a month. Thats how good it is. This shoulod have gotten first place, not second. because there is so many ways you can vary it a bit. I love quiches. Totally love them. Need to get me more recipes like this one. Awesome (to the creator). Way to go girl, Thank you for this.

This is pretty good stuff. I wasn't sure about the amount of dill relish but for us it was just right. I used the 9" deep dish premade frozen pie crusts. I am glad they come in packs of two because I wound up needing to use them both. It made two of these pies. But, I am not complaining and neither do my co-workers! They will gladly devour the benefits of the extra pie. Thanks for the post. I will be keeping this recipe.

I am allergic to all dairy products, not an intolerance but a true allergy. I can modify many recipies and would be glad to share my methods. In this recipe I would use a white scauce with herbs of my choice in the moment and sauted mushrooms instead of the soup. The cheese would be added on top as a garnish for my husband. I look forward to seeing how it turns out.

It looks delicious, but I'd have to make modifications by using ground turkey, soy bacon, yogurt, skim milk and soy cheese as we have high cholesterol and high triglycerides.

I love quiches this one definitely taste like a cheeseburger. The only thing I would change next time is to use a frozen pie crust instead of the refridgerated sheets. I think the frozen pie crust taste better and would give more flavor to this delicious quiche.

This is a wonderful quiche. It is full of flavor. The bacon and dill pickle relish really add flavor to this quiche. I wasn't sure how my husband would like it, because of the "green" bits in it, but he loved it too. I have made it twice in the last few weeks and we eat it right up.

This was really good! When my picky eater son asked "What's for dinner?" I didn't think the word quiche would go over well with him so I told him we were simply having cheeseburger pie. Well, he absolutely loved it and so did the rest of my gang! There wasn't a morsel left over. The only thing I did different was I used a frozen pie shell. It still turned out awesome.
