This was so good. I made it as a birthday cake for a friend who loves ricotta cheese, and who also happens to be the one who makes all the birthday cakes around here because he is so good at it. He raved and raved about it. Absolutely delicious, moist and just sweet enough.

This is a fabulous dessert cake for a very special occassion! Everyone loved it and asked for the recipe. I told them it was a "cannoli" cake since the ingredients are so similar.
