Ingredients

  • 1 can (14 ounces) sauerkraut, rinsed and well drained
  • 1 cup Thousand Island salad dressing
  • 1 pound thinly sliced deli corned beef, cut into strips
  • 2 cups (8 ounces) shredded Swiss cheese
  • 4 to 6 slices rye bread, buttered

Directions

  • In a bowl, combine the sauerkraut and salad dressing; spread into a greased 13-in. x 9-in. baking dish. Top with corned beef and cheese.
  • Place bread, buttered side up, over top. Bake, uncovered, at 375° for 25-30 minutes or until heated through and bubbly. Yield: 4 servings.

Tip

Shred and Freeze Cheese

It’s usually cheaper to buy cheese in blocks than in shredded form. So I purchase large quantities of cheddar, Monterey Jack and mozzarella, then shred them myself in my food processor. I store the shredded cheese in the freezer in heavy-duty resealable plastic bags, so I have it at my fingertips whenever it’s needed. —Evelyn O., Parma, Ohio

I do not drain my sauerkraut. I also make my bread into little cubes and dip into melted butter. I put some on the bottom and then layer kraut ,dressing, corned beef, cheese, and another light layer of bread cubes.

I have requests for this at every get together
