Red Snapper with Orange Sauce Recipe

Ingredients

  • 2 pounds red snapper fillets
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 garlic cloves, minced
  • 1 tablespoon butter
  • 3 tablespoons orange juice
  • 1 teaspoon grated orange peel
  • ORANGE SAUCE:
  • 1 garlic clove, peeled
  • 2 tablespoons butter
  • 3 tablespoons orange juice
  • 1/8 teaspoon ground ginger
  • 2 tablespoons minced fresh parsley

Directions

  • Place the fish in a single layer in a 13-in. x 9-in. baking dish coated with cooking spray; sprinkle with salt and pepper. In a small saucepan over medium heat, cook the garlic in butter for 1 minute; pour over fish. Drizzle with orange juice; sprinkle with orange peel. Bake, uncovered, at 400° for 10-15 minutes or until fish flakes easily with a fork.
  • In a small saucepan over medium heat, cook garlic in butter for 2-3 minutes or until golden brown; discard garlic. Stir orange juice and ginger into butter; heat through. Cut fish into serving-size pieces; drizzle with orange sauce and sprinkle with parsley. Yield: 6 servings.

Nutrition /Facts: 5 ounces cooked fish equals 206 calories, 8 g fat (4 g saturated fat), 69 mg cholesterol, 222 mg sodium, 2 g carbohydrate, trace fiber, 30 g protein. Diabetic Exchanges: 4 lean meat, 1 fat.

I'm just not sure that the orange did much to enhance the flavor of the fish, and I didn't care for the garlic and orange combination, but that's just my opinion.
