Raspberry Linzer Bars

Ingredients
- 1-1/3 cups butter, softened
- 3/4 cup sugar
- 1 egg
- 1 teaspoon grated lemon peel
- 2-1/2 cups all-purpose flour
- 2 cups ground almonds
- 1 teaspoon ground cinnamon
- 1 cup seedless raspberry preserves
- Confectioners' sugar
Directions
- In a large bowl, cream butter and sugar until light and fluffy. Beat
- in egg and lemon peel. In another bowl, mix the flour, ground
- almonds and cinnamon; gradually beat into creamed mixture.
- Press 2 cups of the dough onto the bottom of a greased 13-in. x 9-in.
- baking pan. Spread with preserves. Crumble remaining dough over
- preserves.
- Bake at 350° for 35-40 minutes or until lightly browned. Cool
- completely on a wire rack.
- Sprinkle with confectioners' sugar; cut into bars. Yield: 18 bars.
