Ranch Potato Cubes Recipe

Ingredients

  • 7 medium potatoes, cut into 1/2-inch cubes
  • 1/4 cup butter, cubed
  • 1 cup (8 ounces) sour cream
  • 1 envelope ranch salad dressing mix
  • 1 cup (4 ounces) shredded cheddar cheese

Directions

  • Place potatoes in a greased 11-in. x 7-in. baking dish; dot with butter. Cover and bake at 325° for 60-65 minutes or until tender.
  • Combine sour cream and salad dressing mix; spoon over potatoes. Sprinkle with cheese. Bake, uncovered, for 5-10 minutes or until cheese is melted. Yield: 8 servings.

Nutritional Facts 3/4 cup equals 315 calories, 15 g fat (10 g saturated fat), 50 mg cholesterol, 429 mg sodium, 37 g carbohydrate, 3 g fiber, 8 g protein.

Very easy recipe. Added some bacon on top. Would be good with some chopped green onion. Will definitely make again!

I love this recipe. I even replaced the potatoes with cauliflower and broccoli to make it a healthier dish. Now it's even better!

These were very good, even though I realized I'd used a package of ranch DIP mix instead of the dressing mix. I plan on trying them again using the correct mix the next time.

Easy to make and tasty. A fun alternative to mashed potatoes. The only thing I did different was I used a 13x9 baking dish instead of the 11x7. Will be making this again soon!

I made a double batch for a cookout and they were almost gone at the end. They turned out perfectly and had a lot of wonderful flavor. I added crumbled bacon and it was superb.

My family loved this!!! I used Hidden Valley Ranch Garden Green Onion Dip mix because, believe it or not, the store didn't have the regular mix that day!! Other than that, I made the recipe as is, with full fat ingredients. Served with a vegetable and some fresh fruit for dessert, there's no need to bother with fat-free (bleh!) or low fat ingredients! Will definitely make this again!

These were okay, nothing spectacular yet filling. We did learn that Light or Low-fat Sour Cream curdles when baked like this.

I followed the recipe exactly, and my family loved it! I also made a batch for a pot luck at work and several people asked me for the recipe. Perhaps some time I might top with bacon bits or chives just before serving. Either way, it was a very nice and very easy side dish!

I really wanted to like these since I like all the ingredients listed; but I did not! Maybe it was because I used fat free sour cream. Who knows? I couldn't even finish my serving of them. The kids didn't like them either. Will certainly not be making these again. Sorry.

I used red potatoes, which turned out very well. My boyfriend hates sour cream, but couldn't get enough of them. (I didn't tell him there was sour cream). I will make them again.

Be sure to cover the potatoes in the initial cooking segment. I forgot that part, and they came out a bit overdone. But the flavors were delicious! Next time I'll do it right!
