Quinoa with Peas and Onion

Ingredients
- 2 cups water
- 1 cup quinoa, rinsed
- 1 small onion, chopped
- 1 tablespoon olive oil
- 1-1/2 cups frozen peas
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons chopped walnuts
Directions
- In a large saucepan, bring water to a boil. Add quinoa. Reduce heat;
- cover and simmer for 12-15 minutes or until water is absorbed.
- Remove from the heat; fluff with a fork.
- Meanwhile, in a small skillet, saute onion in oil until tender. Stir
- into cooked quinoa. Add the peas, salt and pepper; heat through.
- Sprinkle with walnuts. Yield: 6 servings.
