Quick Oatmeal Raisin Pancakes Recipe

Ingredients

  • 2 cups quick-cooking oats
  • 2 cups buttermilk
  • 1/2 cup egg substitute
  • 2 tablespoons canola oil
  • 1/2 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raisins

Directions

  • In a small bowl, combine oats and buttermilk; let stand for 5 minutes. Stir in egg substitute and oil; set aside.
  • In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon and salt. Stir in the wet ingredients just until moistened; add raisins.
  • Pour batter by heaping 1/4 cupfuls onto a hot griddle coated with cooking spray; turn when bubbles form on top. Cook until second side is golden brown. Yield: 12 pancakes.

Nutritional Facts 2 pancakes equals 274 calories, 7 g fat (1 g saturated fat), 3 mg cholesterol, 505 mg sodium, 44 g carbohydrate, 3 g fiber, 10 g protein. Diabetic Exchanges: 2 starch, 1 fruit, 1 fat.

Very good! We are celebrating National Pancake Week, this recipe is my husband's favorite, so far! My daughter's 3rd favorite.

Awesome, tasty! They are VERY filling and a little heavier than my usual pancakes so 2 is really enough!

My husband is an oatmeal raisin cookie fan, so I knew he'd like these! I add some extra raisins that I've soaked in hot water. The lower amounts of seasoning in this allow you to add syrup without disrupting the flavor. I'll add more seasoning if we want to eat them plain.

If you're trying to watch your weight and are looking for a happy big breakfast substitute - look no further!! These are delicious and FILLING!! After one pancake, some egg-beaters and a strip of turkey bacon, I was absolutely stuffed because there's so much fiber in the pancakes. My husband was thrilled with them as well. As a quick hint, I substituted the sugar for splenda and half the oil with ground flax and no one was the wiser - you couldn't taste it.
