Quick Marinated Mushrooms

This recipe came to me from a dear friend. I use these flavorful mushrooms as a side dish or to garnish an entree. They're always a big hit at potlucks.

Ingredients
- 1/3 cup water
- 1/4 cup cider vinegar
- 2 tablespoons vegetable oil
- 2 tablespoons olive oil
- 2 garlic cloves, peeled and cut into wedges
- 1 bay leaf
- 4 teaspoons minced fresh parsley
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/4 teaspoon pepper
- 1/8 to 1/4 teaspoon salt
- 1/2 pound fresh mushrooms
Directions
- In a bowl, combine the water, vinegar, oils, garlic, bay leaf,
- parsley and seasonings. Add mushrooms; toss to coat. Cover and
- refrigerate for at least 6 hours. Discard bay leaf. Serve with a
- slotted spoon. Yield: 2 servings.
