Quick Marinated Mushrooms
This recipe came to me from a dear friend. I use these flavorful mushrooms as a side dish or to garnish an entree. They're always a big hit at potlucks. Sylvia Raynor, Corvalis, Oregon

Prep: 10 min. + marinating
Ingredients
1/3 cup water
1/4 cup cider vinegar
2 tablespoons vegetable oil
2 tablespoons olive oil
2 garlic cloves, peeled and cut into wedges
1 bay leaf
4 teaspoons minced fresh parsley
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon pepper
1/8 to 1/4 teaspoon salt
1/2 pound fresh mushrooms
Directions
In a bowl, combine the water, vinegar, oils, garlic, bay leaf,
parsley and seasonings. Add mushrooms; toss to coat. Cover and
refrigerate for at least 6 hours. Discard bay leaf. Serve with a
slotted spoon. Yield: 2 servings.
