Quick Chicken and Dumplings Recipe

Ingredients

  • 6 individually frozen biscuits
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1 tablespoon olive oil
  • 4 cups shredded rotisserie chicken
  • 2 cans (14-1/2 ounces each) reduced-sodium chicken broth
  • 1 can (4 ounces) mushroom stems and pieces, drained
  • 1 teaspoon chicken bouillon granules
  • 1 teaspoon minced fresh parsley
  • 1/2 teaspoon dried sage leaves
  • 1/4 teaspoon dried rosemary, crushed
  • 1/4 teaspoon pepper

Directions

  • Cut each biscuit into fourths; set aside. In a large saucepan, saute onion and green pepper in oil until tender. Stir in the chicken, broth, mushrooms, bouillon granules, parsley, sage, rosemary and pepper.
  • Bring to a boil. Reduce heat; add biscuits for dumplings. Cover and simmer for 10 minutes or until a toothpick inserted near the center of a dumpling comes out clean (do not lift cover while simmering). Yield: 6 servings.

Nutritional Facts 1-1/2 cups equals 417 calories, 20 g fat (5 g saturated fat), 83 mg cholesterol, 1,285 mg sodium, 25 g carbohydrate, 2 g fiber, 33 g protein.

I added celery and sliced carrots instead of the green pepper. I also used refrigerator tube biscuits instead of frozen. Turned out great and so easy!!

This is a family favorite. I added celery and carrots instead of peppers and mushroom. I love how convenient it is using rotisserie chicken and refrigerated biscuits.

Since i don't like peppers, i did not make it with them. The rotisserie chicken added soo much flavor! I will probably add either green beans, corn or carrots to this the next time i make it!

I made this 2 times already, and loved it both times, the last time I added an extra biscuit and a extra can of broth, and I cook my biscuits at least 20 minutes they are delious! Thanks

This recipe really surprised me. The biscuits really looked and tasted like dumplings. I only had one rotisserie chicken and it was not enough. It only provided 2 cups of meat. This is fast and really good. I used celery, carrots, and peas instead of the green pepper and mushrooms. Loved it.

This recipe is so so good, along with being quick and easy. My family loved it, they even said it was better then my old fashion country take all day to cook chicken and dumplings. I added celery and carrots instead of the green pepper and mushrooms. It was a very flavorful and hearty meal. Will make this from now on. Delish!!
