Pumpkin Mousse Recipe
  • Prep/Total Time: 15 min.
  • Yield: 4 Servings

Ingredients

  • 1-1/2 cups cold fat-free milk
  • 1 package (1 ounce) sugar-free instant butterscotch pudding mix
  • 1/2 cup canned pumpkin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1 cup fat-free whipped topping, divided

Directions

  • In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Combine the pumpkin, cinnamon, ginger and allspice; fold into pudding. Fold in 1/2 cup whipped topping.
  • Transfer to individual serving dishes. Refrigerate until serving. Garnish with remaining whipped topping. Yield: 4 servings.

Nutritional Facts 2/3 cup mousse with 2 tablespoons whipped topping equals 96 calories, trace fat (trace saturated fat), 2 mg cholesterol, 360 mg sodium, 18 g carbohydrate, 1 g fiber, 4 g protein. Diabetic Exchanges: 1/2 starch, 1/2 fat-free milk.

I made this for a Thanksgiving dessert since one of my husband's aunt is a diabetic. I could NOT believe how fabulous this tasted being sugar-free. I did also have some Keebler Ginger Snaps to go along with it for the not so sugar conscious people in the family. I can only imagine how terrific it would be made with the "real" sugar products.

This was great - quick & easy. I needed no sugar/no-fat dessert FAST. I used fresh-cooked pumpkin - a generous 1/2 cup and foled in a generous 1/2 cup of fat-free cool whip. My guest asked for the recipe!!

I didn't know how this was going to turn out w/the butterscotch pudding but it was delicious and I used pumpkin pie spice instead of the 3 spices, will make this mousse again.

This mousse was great. I used fat free cool whip and organic pumpkin puree and next time I might try it with light unsweetened almond milk. The taste and texture are amazing and the next day I had a serving as a quick pre-cross country lunch. I will defiantly be making this again!

Just a mediocre recipe with no outstanding flavor. Also, it is not a healthy recipe with sugar-free packaged pudding mix and fat-free Cool Whip. Don't waste the ingredients.

I doubled the recipe for a larger group and used as a topping for spice cake. Instead of using 2 pkgs. of butterscotch pudding I used 1 plus a pkg. of cheesecake pudding. It was delicious.

It's only 2 points per serving.

You can freeze the servings & it tastes just like the Dairy Queen Pumpkin Pie Blizzard but without the guilt.

I highly recommend this dessert!!

I didn't have butterscotch pudding so used vanilla. I used 1 tsp pumpkin pie spices for the spices listed in the recipe. It is an absolutely delicious recipe, one of which I will repeat often in the fall. This could also be used as a layer in a trifle.

This recipe has been a huge success with my family. We have diabetics in our houshold and this recipe allows you to use suger free pudding, SF Cool-whip which allows a diabetic person to enjoy great dessert without running the risk of high sugar readings!

This recipe is soooo good!! It's also a time saver, and all the spices that were needed for this recipe were already in my pantry!! Putting a nice light but decadent twist on this mousse recipe by adding canned pumpkin makes for a great dessert, especially after a big Christmas or Thanksgiving dinner!! It is also something quick you can make over the holidays when you've got that unexpected company!! :0) I will certainly make this recipe in the future again!!

I agree with the comment, above, that it would easily serve 6 people. I sprinkled a bit of nutmeg on top of the cool whip when serving and it made a very pretty presentation. Will definitely make it again!

I have been making this recipe since my Weight Watcher days - long ago, I might add. Try making it with s/f butterscotch pudding, and it's even better.

I needed to make a quick dessert over the weekend and had the ingredients on hand, except I used 2%milk instead. I also added a crushed gingersnap on top as garnish. I don't know if this would still be considered a "light" dessert, but it was very good.

I would get a graham cracker crust & pour the mixture into the crust. Maybe cut the milk to 1 1/4 cups so it's not quite as runny. Then top with cool whip. Try it! you have nothing to lose.

On a similar note, I mixed pumpkin with white chocolate sugar-free pudding and layered it in a trifle with spice cake. It was yummy and I figured the sugar-free pudding kind of counteracted the sugar in the spice cake and it wasn't AS bad as it could have been. :)
