"I collect cookbooks and discovered this recipe while I was in Texas on vacation," writes Barbara Mohr from Millington, Michigan. "The light and puffy pancake really does melt in your mouth! It’s a definite crowd-pleaser that’s as impressive served at dessert as it is at breakfast. My guests always agree!"

Next time, I need to double it because after my husband and I and two year old finished it off, we were left wanting more!

Simple. Quick. Everyday ingredients. A nice treat without a lot of work or mess.

I made this for breakfast for my husband & I. It seemed to be filling enough, yet you didn't walk away with a heavy stomache. Loved the flavor. It was a nice change from regular pancakes.

I'm on a winning streak here with my Taste of Home magazine. Everything I've picked out to make has been incredible, and this recipe is no exception. I really didn't think I'd enjoy the orange flavor with the blueberries but I'm happy to report, I couldn't have been more wrong! This is a very simple, quick, and delicious breakfast/brunch dish. I'll be making it again soon. :D

Wow this is good! I just made this for dinner for me, hubby, and our 4 and 8 yr old. I didn't even make the blueberry sauce...this time. I made this for dinner and scrambled eggs, and each of us got 1 serving of the pancake. I must say, it was sooooo good. I usually put a lot of syrup on pancakes, and I was astonished that I did not put any! And no one else did either! It was naturally sweet and good. We ate it with our hands kinda like bread. Will definitely make it again...and try it with the sauce!

Good recipe and I love the blueberry sauce, my whole family did. However The pancakes are not hearty enough to feed all my men folk. I had to make more batter and sauce to feed all 4!
