Praline Cereal Crunch Recipe
  • Prep: 10 min. Bake: 1 hour + cooling

Ingredients

  • 8 cups Crispix cereal
  • 2 cups pecan halves
  • 1/2 cup packed brown sugar
  • 1/2 cup light corn syrup
  • 1/2 cup butter, cubed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Directions

  • In a 13-in. x 9-in. baking pan, combine cereal and pecans; set aside. In a microwave-safe bowl, combine the brown sugar, corn syrup and butter. Microwave, uncovered, on high for 2 to 2-1/2 minutes or until mixture comes to a boil, stirring occasionally. Stir in vanilla and baking soda.
  • Pour over cereal mixture; stir to coat evenly. Bake at 250° for 1 hour, stirring every 20 minutes. Turn onto waxed paper to cool. Break into bite-size pieces. Yield: 10 cups.

Nutritional Facts 1 serving (1/2 cup) equals 203 calories, 12 g fat (4 g saturated fat), 12 mg cholesterol, 174 mg sodium, 23 g carbohydrate, 1 g fiber, 2 g protein.

This receipe has become a holiday gift for all the people in my office. I used to make it for a "treat" but everyone liked it so much I seemed to be making it every weekend (which I did not have the time to do for so many people). Now for the December holidays I make each person a special bag with this treat. I missed this December due to an illness and everyone was disappointed.

I vary the receipe by using 8 cups of cereals similar to Crispix and it works just as well. I have left out the pecans too for people with nut allergies and they don't miss them either. My hubby can eat this all on his own in just a matter of days and his coworkers really enjoy this receipe too. It is not difficult to prepare and I use disposal pans so I can make a lot at one time. I do find with so much in my oven I do have to let it bake slightly longer, but I've done the receipe so many times that I can tell when it is ready to come out.
