I made this potato salad recipe when I worked in a small hospital. It was served in the cafeteria and to patients that were on diabetic, AHA and regular diets. —Dorothy Bayes, Sardis, Ohio

I have been trying to cut back on fat/calories but missed some of my classic recipes. I was so excited when I found this recipe. This is even better than the "regular" version I had been making and you DO NOT miss the fat/calories. This is now my favorite recipe for potato salad.

I made this twice. First time exactly as given and it is delicious. The second time I cooked four slices of bacon in the microwave till crisp and when cooled crumbled it up. Then I small diced a half of a sweet red bell pepper and stirred it in at the end. I replaced the diced onion with thin sliced fresh green onion (4 of them) I use fresh ground pepper in everything I make that calls for pepper and I used sea salt. This is great pototo salad, good at barbeques and quick to make. I made it the night before and put it in a covered bowl and refrigerated it to let the flavors merge.

This is the best potato salad I've ever made. I'm so glad I found this recipe. I used prepared mustard, more celery and red onion and it was great. There was more dressing than we needed so we'll save it for another salad. Thanks!

Loved it! Simple to make, tastes great! Substituted prepared mustard for the ground mustard because I didn't have any ground on-hand.

Delicious!!! Have made it 3 times and will be using this recipe all the time. I used prepared mustard and added a tsp. of turmeric to give it a yellow color. My husband really likes it, also. Nelda

This a great potato salad! If I don't have the sweet pickle relish I use finely chopped Bread N' Butter pickles.

My father who has cancer says nothing tastes good anymore. I decided to make this for a Fourth of July family picnic and he ate almost the whole bowl. He said it was the best he ever ate and trust me, at this point it is a true compliment! Anyone else that got to taste it loved it also. I will always use this recipe now and it will hold a great memory for me.

Really good-I didn't have mayo so used Miracle whip, didn't have any relish so used finely chopped candied dill strips. Will try next time with mayo but I do usually use miracle whip in salads but will trythe mayo anyway. Thanks for posting, we all loved it.

It would be good with dill pickle relish or chopped dill pickle, a little less sugar I would think.

delicious. I added a tsp of dried dill weed and I substituted seasoned salt for plain salt and it is SO yummy!
