Potato Kielbasa Skillet Recipe

Ingredients

  • 1 pound red potatoes, cubed
  • 3 tablespoons water
  • 3/4 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
  • 1/2 cup chopped onion
  • 1 tablespoon olive oil
  • 2 tablespoons brown sugar
  • 2 tablespoons cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon pepper
  • 4 cups fresh baby spinach
  • 5 bacon strips, cooked and crumbled

Directions

  • Place potatoes and water in a microwave-safe dish. Cover and microwave on high for 4 minutes or until tender; drain.
  • In a large skillet, saute kielbasa and onion in oil until onion is tender. Add potatoes; saute 3-5 minutes longer or until kielbasa and potatoes are lightly browned.
  • Combine the brown sugar, vinegar, mustard, thyme and pepper; stir into skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. Add spinach and bacon; cook and stir until spinach is wilted. Yield: 4 servings.

Nutritional Facts 1-1/2 cups equals 576 calories, 39 g fat (13 g saturated fat), 88 mg cholesterol, 1,695 mg sodium, 31 g carbohydrate, 3 g fiber, 25 g protein.

I made the recipe as directed in the recipe. The sauce was a little too sweet for my hubby but he thought the food combination was excellent. I used the bacon drippings to cook the onions. Very tasty!

My family really enjoyed this recipe. It was really quick to make. We did change the recipe slightly by cooking the sausage and then carmelizing the onion. We will definitely make again.

The skillet was surprisingly tasty. It had good flavor, but the texture was slightly mushy. I would crisp the potatoes a bit more in order to give it a little bit more texture.

I got thumbs up (literally) from full mouths with so solicitation. Easy and it has great flavor. With the exception of the fresh spinach (which I can pick up on the way home), I usually have all of the other ingredients on hand. Will make this many times over. Hint: I keep a jar/bag of ?Real Bacon? in the refrigerator at all times. 1 t. = 1 slice of bacon. This cuts down on the cooking time.

Made this last night for dinner. Was pretty quick and very tasty sauce. I used Italian Turkey sausage as that is what I had and it worked very well. I will make this again and even feel comfortable serving to guests. Much less fat using Turkey sausage.

Forgot to mention that I double the sauce as the recipe doesn't make nearly enough. Also, I have used apple juice with some white vinegar when I don't have the cider vinegar handy and it works well.

<p>I found this recipe a while back and have made it quite a bit. I have done it with and without bacon and prefer it without. I add lots more spinach to add color and nutrition.  Easy and delicious.</p>

I use honey mustard instead. This has become a family fave! Even my picky picky kids eat it! I usually leave out the bacon when I don't feel like messing with cooking it. DELISH!

Wonderful, easy dinner for the whole family. I followed the recipe minus the thyme because i was out of it, and i used sweet potatos as well to make it a bit healthier. Our 4 children between 7 & 13 loved it! It's a keeper :)

My family loved this dish! I cannot get away with anything 'green' in a meal, so I skipped the spinach, and served a veggie on the side instead. I also used 4 Tbsp. brown sugar to make this a bit sweeter. I will be making this again!

I really wanted to like this recipe! I had leftover kielbasa to use up, and always have potatoes as my dad works on a potato farm, so this seemed too good to be true. Unfortunately, it was. My potatoes never browned nicely, and the sauce smelled quite vinegary, even though I made sure to use dijon (not yellow) mustard and apple cider as it is more mellow. I didn't add the spinach as my husband doesn't care for it. Instead, I added some carrots for color. I think it was the sauce that was the most disappointing, so I'm going to work with the base ingredients and go from there. Maybe I will substitute some butternut squash or sweet potato for some of the potatoes.

I hope other people have better luck with this recipe that I!

This was so good. This time I added a little more spinach since we love it and it seems to disappear. I also cooked my bacon first and then browned my cooked potatoes in the bacon grease. It added a nice touch to the meal.

My family loved this. I used a little over a tablespoon of vinegar and did 2lbs of potatoes which I microwaved for 10 minutes in a steamer and it was perfect.

I didn't follow the directions for the potatoes but definitely will next time. My potatoes weren't cooked as tender as I like them. The overall dish had a very nice taste to it, I really liked the sweetness.

I don't know what rennay86 did wrong, but it had to be something, because I make this fairly often as it is so well liked here. I don't smell vinegar, and the potatoes hold up well....not mushy. And the kielbasa browns when sauted with the onion. Oh, well. The only thing I do differently is boil the potatoes on the stove.....I don't like microwaved stuff. I also triple the sauce ingredients because as written, just not enough. Leftovers are just as good.

Slight modifications. I used russett potatoes because I didn't have red ones on hand, and I used probably closer to two pounds. I also used bacon bits because I didn't have fresh bacon. Other than that, I used the ingredients listed. I don't like using a microwave, so I par-boiled the diced potatoes, drained them, and put them in a separate pan with butter, salt, and pepper to brown them. This is because I forgot to look at the directions and had already added the bacon bits, vinegar, brown sugar, and other condiments/spices. So, I added the potatoes and spinach leaves, mixed it well, and let it cook a few minutes until the spinach was wilted. The meal was a hit! The kids loved it. I'll have to triple the ingredients next time so there is enough for everyone to have second helpings! So even if you mess up on a few things (like I did) this recipe still works. Two tablespoons of vinegar was not too much, but if you're worried, start with one tbsp and then taste the dish before adding the 2nd.

This recipe has become a regular in our dinner rotation! It's easy, filling, and pleases husband, kids and me! I always make with light kielbasa and extra spinach and it turns out great. We often omit the bacon, too, when we're trying to go lighter.

DH and I loved this! It reminded us of a meal we ate at the Biergarten restaurant in Epcot! I cooked my potatoes longer b/c I don't like hard potatoes and I added additional salt. I also used less spinach b/c my kids hate green food:)

Tried this tonight for the first time since the only thing we had left in the fridge was kielbasa and some potatoes... I will never make this again. The whole place reeked of vinegar, the potatoes just turned to a mush and the kielbasa never browned because the potatoes made a mush gravy. The sauce tasted nothing like a sauce... the vinegar was way overpowering! I am very disappointed after reading how other's reviewed this I was looking forward to a hearty tasty meal for the family. Looks like we'll be ordering pizza tonight.

Not impressed..too much salty sausage for the amount of potatoes, potatoes too mushy, not enough sauce for the amount of potatoes so there was nothing to 'boil'...very disappointed.

This is a great base recipe - I followed exactly for the sauce, but added one can of cannellini beans and about 6oz of sliced baby bella mushrooms. The bacon doesn't add much unless you make it crispy (which I didn't, since all I had was thick-cut strips), so next time I will either use thinner bacon or omit the bacon altogether in favor of a 1/2 lb of sage breakfast sausage. More meat is a must!

My 93 year old father is a very picky eater and he loved this meal. It is definately a make again recipe. I used Turkey Kielbasa because I felt it is a better choice for our family.

I omitted the spinach and onions (picky boyfriend) but this was delicious nonetheless. I have made it countless times since we first tried it, and it never gets old! As a bonus - we had some left over while camping, and it was delicious served on top of scrambled eggs for breakfast in the morning, with a bit of shredded cheddar cheese to garnish.

Only thing I changed was using good Texas Hill country sausage instead of Kielbasa and I cooked my potatoes in the bacon drippings left from the 3 strips I fried. Next time I'll salt the potatoes when I start cooking them since the finished product lacked flavor, which surprised me. Doubling the sauce ingredients (except the oil) would be a consideration. More spinach wouldn't hurt, either. Otherwise, good for a quick meal.

This is one of our favorite recipes. The dijon mustard adds a great kick to the dish. I leave out the bacon to save on calories & sodium and I use yukon gold potatoes instead of reds (just cook them a few minutes longer).

Absolutely loved this recipe. The combination of flavors is so tantilizing. Calorie count is pretty high per serving but you have all three major food groups in one dish. So. guess it's not so bad.

My hubby loves this recipe! I put my own twist into it by using potato o'brien instead of cooking red potatoes. It came out flavorful. I only put a few tablespoons of the sauce while I was sauteeing the potato o'brien so as not too make it soggy. I set aside the remaining sauce in a small bowl to be served by the table. I also cut the amount of sugar to just one tablespoon as the other reviewer commented it's too sweet if following the original amount. I also follow the suggestion of using a spicy brown mustard. It came out great and will definitely do this again:) Thanks for sharing!

I rated it a bit low only because the sauce was entirely too sweet and I only used 1/3 cup of sugar. Next time I make it I am going to use 1/8 of a cup. Also I am cutting the sauce by 8 oz. It was a bit too "gloppy." Other than those criticisms, we liked the dish. Oh, I also added several turkey meatballs as one family member is not keen on kielbasa.

I always follow the recipe the first time I make things, just to be sure. While I will definitely make this again, I will be cooking the potatoes in a pot on the stove. Other than that, it was very good. My husband, who doesn't really like kielbasa sausage, loved it and requested I make it again. I did forget the bacon, but it was delicious without it and definitely doesn't need it, but I'm sure it's great with it because bacon makes everything better!!

What I like about it is that you can get things prepared ahead of time; i.e., cook the bacon, chop the potatoes, slice the kielbasa. I played w/the sauce a bit (didn't have "thyme" - hee, hee!). I also used a different mustard (spicy brown). With all the colors, it looks very nice:) Thanks!

This recipe is super easy and so tasty... I've made it three times in the last three weeks and the boys are clamoring for more! I would suggest doubling it if you're going to feed more than 2 people. We also substitute spicy brown mustard instead of the dijon and it gives it a nice little oomph! Enjoy!!!

I haven't tried this recipe yet but I make another kielbasa recipe for my boyfriend that we love at least once a month. I am deff trying this recipe and from what others have said it's a keeper and would love to put this in our rotation so now we have 2 diff kielbasa recipes to make. I think he will love this recipe as much as I think I will, we love kielbasa it has a great taste and I love that this recipe has meat, potatoes and veggies.

This is wonderful! I diced the potatoes and fried them in olive oil right in the skillet along with the kielbasa and onion. I used turkey kielbasa and turkey bacon to make it healthier, but I would omit bacon next time. You don't really taste it with all the other flavors. Definitely double the sauce as others have recommended. Everyone loved this! It's a keeper.

This was a great quick meal. My fiance is a somewhat picky eater and doesn't like spinach so I substituted 1/2 bag of broccoli/cauliflower mix (partially cooked)and doubled the sauce and it was great.

I've made this recipe many times. While this recipe is great the way it is, I'd like to share my latest changes:

I used 2 bags of BirdsEye SteamFresh Spec. Seasoned Asian Medley Veg. and 2 bags of BirdsEye SteamFresh Lightly Sauced Roasted Red Potatoes w/ Garlic Butter Sauce (both cooked in the micro according to directions). I tripled the sauce because we love the flavor. I also added a bit more garlic because we are garlic lovers. These changes made the whole dish different in looks but not so much in taste that it altered the original great recipe, just something different. It was also a lot faster to put together that the original recipe which is why I did it. It was super fast and everything was cooked perfectly. Can't ask for anything more.

I must say I was really looking forward to this meal. It sounded so good and smelled so yummy.....but frankly I was very disappointed. I honestly think it would have been better WITHOUT the sauce. Maybe just a little cayenne pepper and garlic.....I've made much better, similar dishes without a recipe and was happier with the result.

Be sure to use the best smoked kielbasa you can find. Had I made this with my usual turkey kielbasa, it would have lacked the amazing flavor that resulted. I can't tell you how amazing this was. I am so glad I made this. Like other reviewers, I didn't microwave my potatoes; I fried 'em in the bacon grease (after reserving half of the bacon grease in case I'd need it later in this recipe). This isn't healthy, but so what! It's worth the occasional indulgence. We were licking our plates when we were done (well, figuratively speaking). Thanks for this recipe!

I modified this recipe, using marjoram instead of thyme, since I dislike thyme. I used 3 strips of bacon instead of 5, to cut down on saturated fat with no discernable reduction in flavor.

I am willing to try this one again. The flavors were alright but my potatoes were a complete pile of mush. I thought I followed the directions but my potatoes never browned up. Pretty gross texture. I think I will try cooking the potatoes differently.

This was so very good! I made it as written except I omitted the bacon and added 1/4 tsp. liquid smoke. I love the smokey flavor and the hint of mustard! I served this with a side of scrambled eggs! My whole family LOVED this, so I will surely be making this again!

I've made this twice now and it is a hit at my house. It really needs more spinach and a full pound of kielbasa, along with more sauce to make it wonderful. Did the potatoes in the microwave and it took three times longer than states in recipe so be sure to do those first. Bacon is NOT needed at all.

My husband and I loved this!!! I was a little leery of the sauce since I don't like Dijon but mixed with all the other flavors it was great!! Our kids didn't like the potatoes but ate the rest of the dish.

This was very good. Next time I would add more spinach, use 1 1/2 to 2 lbs fresh bratwurst instead of 3/4 lb of kielbasa or polish sausage and double the sauce. Cooked the potatoes on the stove instead of the microwave, and used COSTCO real bacon bits instead of crumbled strips of bacon; it's times saving and there is less fat.

One of my favorite recipes so far! The combination of flavors sounds odd, but was a wonderful change. My husband really liked this recipe as well. Pretty easy to make. Recommend making only enough for one meal as the leftovers are not quite as good as the first meal. Will make this one again and again.

Excellent recipe! I used venison country style sausage in place of the "smoked kielbasa or polish sausage" and the recipe still turned out amazing. Also, I didn't have cider vinegar available so i used red wine vinegar instead. Will definitely make again

This was great! Pretty much followed the recipe, but the potatoes took twice as long to cook... By the time they were done, the sausage and onions were getting a little too brown, so I took them out of the skillet and browned the potatoes by themselves... I don't think the bacon is really necessary - it doesn't really make too much of an impact on top of the sausage.. However, I did use it - I just added 6 slices of the precooked bacon when I was browning the sausage and onions... Overall, it was a great dish!

Unless your a master chef you are not completing this meal in 30min. however its worth the extra time! I cooked my bacon first then used 2tlb of the fat to saute the kielbasa, onion, and also I substituted the fresh spinach with thawed frozen spinach and saute it as well. I also suggest doubling the sauce recipe. Yummy Yummy!!

This was absolutely delicious! It was incredibly easy to make and probbly one of the fastest dinners I have ever put on the table. (with the exception of hot dogs or take out) It covered all aspects of a meal and my family LOVED it! I have to double the next for leftovers!

I thought this a wonderful fall supper. I cubed the potatoes and they got done in the microwave in 4 minutes. I too doubled the sauce. I used a pound of sausage. It reheated in the microwave well, my final test for leftovers. I think you could eliminate the bacon but I love bacon and spinach so I followed the directions.

Hubby says this recipe is a 'KEEPER'. Usually I do not follow a recipe. I always add and take away depending on what I have on hand. I used4 Italian sausages instead of the kielbasa, I added water to the sauce right before I added the bag of baby spinach, and low sodium turkey bacon. I also used golden potatoes, because that's what I had on hand. Super fast and tasty meal.

I wouldn't call this recipe "quick", as it takes a little time to prep. But it's well worth it! The sauce adds that special something to this dish. I sprinkled grated parmesan cheese over it. Great recipe!

I found this recipe a few years ago from Taste of Home and we just love it! We generally make a double batch so we can have left overs. Because we are not spinach lovers, we leave that out and have a salad on the side. Also do not use any bacon, but will use left over bacon grease, if handy, instead of the oil.

I make this but with fewer ingredients. Cut the potatoes and fry (without microwaving) with sausage and onions. Cover partially to help the potatoes cook in the beginning. I like it served with horseradish or dijon mustard. Simple good dish.

My family has been making a dish similar to this one for over 30 years. I prefer Russet Potatoes peeled and cubed in 3/4 inch cubes. Slice the Keilbasa in 1/4 inch slices. Heat a large skillet over med heat with Vegetable oil for frying, When it is hot add the potatoes and Keilbasa and a Large Yellow onion, peeled and diced small and add salt and Fresh Ground Black pepper to taste. Cover and cook occassionally stirring to allow brownng. For those who like Peppers in their skillet, (Personally I like Jalapenos, seeded and diced small) add after about 15 minutes of cooking. When potatoes are browned and softened, remove the cover and finish cooking. Remove from heat and place in Large Bowl and sprinkle either Monterey Jack or Pepper Jack Cheese on the Potatoes and allow it to melt and then serve. For Color you can use Green onions cut in 1" lengths instead of the Yellow onion. The Red Potatoes will work but they take longer to soften and cook. Use as little oil as you can get away with to keep from sticking because as the Keilbasas cooks it will release enough oil to do the job. I start with about 2 Tbsps and toss the potatoes in the skilet to coat them as soon as I put them in the skillet.

Just tried this for the first time tonight and my husband and I loved it! As others mentioned the potatoes need longer in the microwave, omitted the spinach and added maybe 1/4 c water to dilute the sauce. I will double the recipe next time so we have leftovers!

A good quick meal to make on a hectic night. I doubled the sauce like the other reviewers recommended, and I would maybe triple it next time. I also cooked the potatoes separately since my microwave is rather tiny, and topped them with the kielbasa mix.

I make this all the time in the fall and winter. The recipe is perfect as-is. Well, maybe a little longer cooking time on the potatoes and I do use the whole 1 lb pkg of kielbasa and I am a bacon lover but I usually leave it off and it's just as good. But other than that ;) the recipe is perfect as is.

I used turkey bacon and leftover (well -drained spinach). I made twice the sauce, at the recommendation of so many reviewers, but made it a little less vinegary and a little less sweet. Delicious! Good comfort food on a gloomy day.

We loved this! I left out the spinach both times I've made it and have doubled the sauce. I've also cut back on the vinegar a tad so it's not too sour. And, definitely cook the potatoes longer! It takes more like 10-12 mins in the microwave... Great recipe!

This a really good recipe.

I sprinkle the red potatoes with olive oil and rosemary and roast them until they are slightly browned rather than microwave. and as others have mentioned defiantly double the sauce.

I give this 4 stars, but we will definitely make it again. I think that it has 5 star potential if we increase the precooking time of the potatoes and double the sauce. I will also probably put more spinach in it. Overall, I would recommend this recipe.

It kind of reminded me of german potato salad with kielbasa and spinach. The spinach really didn't add much, I was thinking about using asparagus or red peppers because I had them in the house. Probably should have, next time.

Really good meal, although I think I overcooked the potatoes. Once I got them into the skillet, they didn't get brown like the picture shows. BUT they tasted great anyway. I used turkey smoked sausage to cut back on the calories and real bacon bits instead of the bacon, too. I do Weight Watchers and this ended up being 7 PointsPlus for 1 1/2 cups. Good deal!!

Made it and really liked it. I didn't have cider vinegar so I used a bit of malt and added a cup of water to weaken it. Potatoes also needed more than 4 mins in the microwave but overall, one dish, meat, potatoes and veg! Can't be beat. Oh, I threw in some broccoli too and left out the mustard and bacon because I didn't have any either and it still came out really good. Used fresh cracked pepper.

The flavors and the aroma that still lingers in my kitchen make this dish a definite keeper. Rather than frying bacon I used 5 Tablespoons of Hormel Real Crumbled Bacon with 50% less fat. I never fry bacon anymore. Can't wait to make it again.

This was really quick, easy and very tasty. Since the recipe has meat, potatoes and spinach, it makes 2 main dish and vegetable servings. Two slices of bacon are plenty, so i would reduce the bacon to lower the fat and sodium content.

My husband hates when I make new recipes for a main meal. He is a meat and potato man ~ and don't do anything other than cook them simply. Kielbasa is a favorite of his. I took my heart in my hand and decided to try this recipe because I just get tired of cooking everything the same old way. HE LOVED IT!!!! It really was very good and will now be on my rotation menu at least once a month.

I did have trouble with the cooking of the potatoes in the microwave. First time they were still hard. Then I over cooked them and they were wrinkled prunes. Third time was the trick. I will probably boil them next time. I also tripled this recipe so I could share it with my daughter and her husband. They loved it as well and want more when I make it again.

I do wonder if you could use canned potatoes, cubed. Might try that. I also wonder how this dish might taste if instead of cooking the potatoes you added a large can of German Potatoe Salad and omit the brown sugar, vinegar and spices. It would also make the recipe quicker. A thought.

I brought this dish to a birthday party yesterday and it was a big hit with everyone. I used fingerling red potatoes and sliced them which caused me to have to microwave for 12 mins. to ensure they were soft enough and I did not used any bacon, I did not want to take away from the taste of kielbasa. I used brats, as that is what I had on hand. Ididn't add the bacon. This was a tasty dish, I know kielbasa would be great too. This was hearty and slightly sweet, could be more savory by using less sugar. I will add, the potatoes took 3 times as long to cook in the microwave, I would probably use the stove top next time.

I substituted sweet potato for the regular potato and Bistro Sensations Spinach w/Mozzarella chicken sausage (120 cal one link) for for the kielbasa. Excellent taste. My friends raved about it and asked for the recipe.

My family loves this recipe!  I use light kielbasa and leave out the bacon to save fat & calories!

Potato kielbasa skillet is an excellent source of most of the vitamins we need to survive and this dish tastes very, very good. It's a keeper, for sure.

My sisters and I LOVE this dish. We make it a minimum of once a month (we get together on Thursday for a family dinner). One time we overcooked the potatoes and they were a little mushy, we decided we like it better that way. All the flavors just tend to meld together.. hehe

This was delicious. I didn't have any bacon, but I had bacon fat in the fridge and used that to saute the kielbasa and onion.

My picky kids asked for seconds and even ate the spinach! I started with 5 strips of uncooked bacon which I diced and then sauted in the pan until crisp, removed with a slotted spoon and drained off all but 1 tablespoon of the bacon fat. Instead of olive oil, I sautéd the kielbasa and onion in 1 tablespoon bacon fat. This substitution added extra flavor. Yes, I am aware that it also adds 5 calories to this dish as well as added cholesterol.

I substituted a turkey kielbasa here to lighten it up. This would be good for brunch.
