Potato Chip Crunchies Recipe
  • Prep: 15 min. Bake: 15 min./batch
  • Yield: 48 Servings

Ingredients

  • 2 cups butter, softened
  • 1-1/2 cups sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 1 cup crushed potato chips
  • 1 cup chopped pecans

Directions

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Gradually add flour and mix well. Fold in the potato chips and pecans.
  • Drop by tablespoonfuls 1-1/2 in. apart onto ungreased baking sheets. Flatten with a fork. Bake at 350° for 12-14 minutes or until golden brown. Remove to wire racks to cool. Yield: 8 dozen.

Nutritional Facts 1 serving (2 each) equals 154 calories, 10 g fat (5 g saturated fat), 25 mg cholesterol, 86 mg sodium, 15 g carbohydrate, 1 g fiber, 2 g protein.

I have made these many times and they are always a hit. Try adding a cup of butterscotch or peanut butter chips to the dough.

MAYBE IF YOU DIP THEM IN MELTED CHOCOLATE CHIPS, THEY'LL TASTE LIKE CHOCOLATE COVERED POTATO CHIPS. WORTH THE TRY
