Potato Brunch Medley Recipe

Ingredients

  • 1 medium potato, peeled and cubed
  • 1 tablespoon butter
  • 1 medium green pepper, chopped
  • 1 medium onion, chopped
  • 1 medium apple, peeled and cubed
  • 2 tablespoons water
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  • In a small skillet, saute potato in butter for 8 minutes. Add the green pepper, onion and apple; cook 6-8 minutes longer or until potato begins to brown.
  • Add the water, brown sugar, salt and pepper; cook and stir until blended and heated through. Yield: 2 servings.

Nutritional Facts 1 serving (1 cup) equals 216 calories, 6 g fat (4 g saturated fat), 15 mg cholesterol, 656 mg sodium, 40 g carbohydrate, 5 g fiber, 3 g protein.
