Popeye Special Recipe

This recipe is a family favorite that I created - and named! - myself. The spinach packs it with a real "Popeye punch", and the other vegetables combined with the ground beef make it a hearty meal.

Fixed this for brunch this morning and hubby and I liked it very much. We did add some red pepper flakes, since we like dishes more spicy. Thanks for the recipe.
