Popcorn Delight Recipe
  • Prep: 15 min. + chilling
  • Yield: 24 Servings

Ingredients

  • 14 cups popped popcorn
  • 2 cups salted peanuts
  • 2 cups crisp rice cereal
  • 2 cups miniature marshmallows
  • 1 pound white candy coating, coarsely chopped
  • 3 tablespoons creamy peanut butter

Directions

  • In a large bowl, combine the popcorn, peanuts, cereal and marshmallows. In a microwave, melt candy coating and peanut butter; stir until smooth. Pour over popcorn mixture; toss to coat.
  • Spread onto waxed paper-lined baking sheets; refrigerate for 15 minutes or until set. Break into pieces. Store in an airtight container in the refrigerator. Yield: about 6 quarts.

I don't care to much for popcorn so I used the puffed corn pops and it turned out wonderful!

I am surprised that it says to store in the fridge.....do you all do that? What in the ingredients needs refrigerating? Doesn't it make the popcorn soggy?

The recipe sounds great, but does anyone have an alternative for diabetics. Both my husband and I have recently be diagnosed with having Type 2 diabetes and I'm looking for low carb recipes

My mother-in-law gave me a modification of this using cashews instead of peanuts and leaving out the peanut butter. Now I can make a duo for gifts!
