Popcorn Delight Recipe
  • Prep: 15 min. + chilling
  • Yield: 24 Servings

Ingredients

  • 14 cups popped popcorn
  • 2 cups salted peanuts
  • 2 cups crisp rice cereal
  • 2 cups miniature marshmallows
  • 1 pound white candy coating, coarsely chopped
  • 3 tablespoons creamy peanut butter

Directions

  • In a large bowl, combine the popcorn, peanuts, cereal and marshmallows. In a microwave, melt candy coating and peanut butter; stir until smooth. Pour over popcorn mixture; toss to coat.
  • Spread onto waxed paper-lined baking sheets; refrigerate for 15 minutes or until set. Break into pieces. Store in an airtight container in the refrigerator. Yield: about 6 quarts.

I made this receipt about three Christmases ago and was surprised at how simple the recipe was and at how much it made. My daughter, who was 7 at the time, helped me make it and now it is our tradition to make together and jar/package to give away to family/friends at Christmas. She shared a large jar full with her friend's family this Christmas season and she said they ate it all within 30 minutes! I would recommend this recipe to anyone who loves popcorn!!

I have made this over and over again. Everyone loves it and can't stop munching on it wherever I take it. I usually use microwave popcorn and it still turns out great. Very easy and simple!

This was delicious! I was a little suspicious but it's yum! I used small amish popcorn so the kernels were smaller. I thought it tasted a bit like fluff-r-nutter sandwiches!! LOL thx for the recipe:)

What is white candy coating???

It's essentially white chocolate for candy making.  You can find it in two place in your local grocery store.  The bulk department will have melting discs available in multiple flavors, usually made by Merken.  In the baking department you'll find Almond Bark, it comes in white and milk and looks like a big block.

I am surprised that it says to store in the fridge.....do you all do that? What in the ingredients needs refrigerating? Doesn't it make the popcorn soggy?

The recipe sounds great, but does anyone have an alternative for diabetics. Both my husband and I have recently be diagnosed with having Type 2 diabetes and I'm looking for low carb recipes

My mother-in-law gave me a modification of this using cashews instead of peanuts and leaving out the peanut butter. Now I can make a duo for gifts!

I used vanilla almond bark and generic Rice Krispies. This was very easy to make and was ready to eat in 15 minutes. Good mixture for social gatherings or just to have as a sweet snack.

I didn't make it yet, but it sounds yummy, so I will be making it. Candy coating is chocolate made into round discs that look like flat Hershey's kisses and are used for candy making, as they melt quickly. You can find them at a candy supply store or at an craft supply (usually carry them) store. The rice cereal is Rice Krispies or similar store brand cereal.

I love this recipe! I just finished making it and have been munching on it. Hopefully there will be enough for the Halloween party! I used orange colored vanilla flavored candy melts (available at craft stores) and it looks very fall-inspired. I used Spanish peanuts because that's what I had on hand and it looks and tastes great. I will definitely be making this again, using different colored candy melts to fit the season!

This recipe was so easy! Will definitely make it again. For the rice cereal I used Rice Krispies. For the candy coating I used the Wilton Candy Melts (I chose to use the Red color - Vanilla flavoring, as it gave it a nice "bloody" look.) Hope this answers some of your questions.
