Ingredients

  • 2 cups biscuit/baking mix
  • 2 teaspoons Italian seasoning
  • 2 eggs
  • 1 cup milk
  • 1/2 cup shredded part-skim mozzarella cheese
  • 1/2 cup chopped pepperoni
  • 1/2 cup chopped plum tomatoes
  • 1/4 cup chopped green pepper
  • 1 can (8 ounces) pizza sauce, warmed

Directions

  • In a large bowl, combine the biscuit mix and Italian seasoning. Combine eggs and milk; stir into dry ingredients just until moistened. Fold in the cheese, pepperoni, tomatoes and green pepper.
  • Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top; cook until the seconds side is golden brown. Serve with pizza sauce. Yield: 14 pancakes.

Nutrition Facts: 1 serving (2 each) equals 270 calories, 14 g fat (5 g saturated fat), 79 mg cholesterol, 794 mg sodium, 26 g carbohydrate, 1 g fiber, 10 g protein.

The kids did loves this but I thought it need some more season..I will make them again. They are very easy to make and easy for my kids to eat without the mess!

This recipe is SOOO good!
Instead of making them like pancakes, I use my waffle iron. I was not impressed doing it in a skillet. I found they stuck horribly and I had to take them out in pieces.

I have did some experimenting with this recipe, and instead of using pizza ingredients used items that I would use to make hamburgers. I used ground meat, onion powder, american cheese slices torn into pieces.  Then serve lettuce, tomato, ketchup/miracle whip/mustard with them. They are really good!
Thought about the next time I do them to make Taco Waffles. And use the taco seasoning, meat and cheddar cheese in the mix..and serve it with whatever you top your taco's with. YUMMY!

I have thought of many, many different ways to fix these.The ideas are almost endless.  These are such a hit with my family, that my kids grab the leftovers out of the fridge, including my 16 mo old boy and scarfs them down cold!

I also found my family likes the pizza recipe much better without the italian seasoning.
