Pistachio Mallow Salad Recipe
  • Prep: 5 min. + chilling

Ingredients

  • 1 carton (16 ounces) frozen whipped topping, thawed
  • 1 package (3.4 ounces) instant pistachio pudding mix
  • 6 to 7 drops green food coloring, optional
  • 3 cups miniature marshmallows
  • 1 can (20 ounces) crushed pineapple, undrained
  • 1/2 cup chopped pistachios or walnuts

Directions

  • In a large bowl, combine whipped topping, pudding mix and food coloring if desired. Fold in the marshmallows and pineapple. Cover and refrigerate for at least 2 hours. Just before serving, sprinkle with nuts. Yield: 12 servings.

Nutritional Facts 1 serving (3/4 cup) equals 236 calories, 9 g fat (7 g saturated fat), 0 cholesterol, 140 mg sodium, 35 g carbohydrate, 1 g fiber, 2 g protein.

We throw a surprise 80th birthday party for my Dad yesterday. 115 guest in attendance, so I made 10 recipes of this pudding. I mixed the walnuts throughout the pudding. Also made a third of it without the marshmallows, a few family members like it that way. To share a party menu idea with everyone, we served 3 types each of soup and sandwhich. Soups: ham and bean, wedding and stuffed pepper soup. Sandwiches: hot turkey, keilbasa and sauerkraut and cold beef spread. Also served coleslaw, this pudding, and cake. It was a nice alternative to our normal chicken and rigatoni.

My grandma made this every year at the holidays and she passed away last christmas so I made this for my dad for thanksgiving and it brought back so many memories for us!

This is so good. I added a can of cocktail fruit with half the juice and used crushed walnuts as a topping... absolutely delicious!

I always make this recipe,I usually add a container of sour cream to this recipe. So easy and delicious. No need to put nuts and food coloring.

I use to make this back in the Nixon era and it was called Watergate salad, I have no idea why. I had forgotten about it until last year when my adult son asked for it at Christmas. I have started making it again. I pulled it together from memory, not I have the recipe again.

Our family has been eating this for YEARS!! My kids called it "Green Stuff" so that name stuck...it is quick, easy, inexpensive and delicious....my keds did not like the extra nuts, so we eliminated them....we have given this recipe out to so many folks...one taste and they would ask, "what is this?"...the kids would all say "Green Stuff" and the recipe would be copied for the visitors...Good food! Good memories!

This EXACT recipe has been in my family for generations. My grandmother used to make this for every occasion. It is amazing, I love it so much! I was hoping to find it on-line because I never could figure out the measurements, this recipe is dead on. And if you do it right, it's not too dry! It's always moist and melts in your mouth.

This salad appears to be missing something - too dry. I remade it with with the suggested version from hdneuhaus and it was much better.

Try to lighten this up with sugar-free pudding 1 oz. and lite syrup pineapple.

Let the kids get their legs in the kitchen with this one. Let 'em have a couple marshmallows and they get to lick the bowl, too.

I MADE THIS SALAD ADDING 1 CAN DRAINED MANDARIN ORANGES AND 2 CUPS COTTAGE CHEESE FOLDED IN. I DECORATED THE TOP WITH MARACHINO CHERRIES HELEN 12/2007
