Pistachio Fig Tartlets Recipe

Ingredients

  • 1/3 cup chopped dried figs
  • 1/4 cup packed brown sugar
  • 3 bacon strips, cooked and crumbled
  • 2 tablespoons butter, melted
  • 1 package (1.9 ounces) frozen miniature phyllo tart shells
  • 2 ounces cream cheese, softened
  • 2 tablespoons crumbled blue cheese
  • 1 tablespoon confectioners' sugar
  • 1 tablespoon thawed apple juice concentrate
  • 3 tablespoons finely chopped pistachios
  • Additional pistachios, optional

Directions

  • In a small bowl, combine the figs, brown sugar, bacon and butter. Spoon into tart shells.
  • In another bowl, beat the cheeses, confectioners' sugar and apple juice concentrate until blended. Stir in chopped pistachios; dollop over tartlets. Sprinkle with additional pistachios if desired. Chill until serving. Yield: 15 appetizers.

Nutritional Facts 1 tartlet equals 106 calories, 5 g fat (2 g saturated fat), 10 mg cholesterol, 85 mg sodium, 12 g carbohydrate, 1 g fiber, 2 g protein. Diabetic Exchanges: 1 starch, 1 fat.

Tip

Purchasing Pistachios

When buying unshelled pistachios, look for ones with the shell partially open so it's easier to retrieve the nut. Also, a closed shell indicates an immature nut.
