Pistachio Baked Salmon Recipe
  • Prep/Total Time: 25 min.

Ingredients

  • 6 salmon fillets (6 ounces each)
  • 1 cup pistachios, chopped
  • 1/2 cup packed brown sugar
  • 3 tablespoons lemon juice
  • 1 teaspoon dill weed
  • 1 teaspoon pepper

Directions

  • Place salmon in a greased 13-in. x 9-in. baking dish. Combine the remaining ingredients; spoon over salmon.
  • Bake, uncovered, at 425° for 12-15 minutes or until fish flakes easily with a fork. Yield: 6 servings.

Nutritional Facts 1 fillet equals 505 calories, 28 g fat (5 g saturated fat), 100 mg cholesterol, 194 mg sodium, 25 g carbohydrate, 2 g fiber, 39 g protein.

Tip

Purchasing Pistachios

When buying unshelled pistachios, look for ones with the shell partially open so it's easier to retrieve the nut. Also, a closed shell indicates an immature nut.
