Pistachio Ambrosia Recipe

Ingredients

  • 2 cans (17 ounces each) fruit cocktail
  • 2 cans (20 ounces each) pineapple chunks
  • 2 cans (11 ounces each) mandarin oranges
  • 4 packages (3.4 ounces each) instant pistachio pudding mix
  • 2 cups (16 ounces) sour cream
  • 1 carton (12 ounces) frozen whipped topping, thawed
  • Chopped pecans, optional

Directions

  • Drain fruit cocktail, pineapple and oranges, reserving 3 cups juice. Set fruit aside; pour juice into a 4-qt. bowl. Add pudding mix and mix until smooth. Stir in sour cream. Add whipped topping and mix until smooth. Fold in fruit; chill for several hours. Top with pecans just before serving if desired. Yield: 16-20 servings.

Nutritional Facts 1 serving (3/4 cup) equals 159 calories, 7 g fat (6 g saturated fat), 16 mg cholesterol, 82 mg sodium, 21 g carbohydrate, 1 g fiber, 1 g protein.

My family and I love this recipe for our parties. Most eat this as a dessert. I use Canned fruit in its own juice.

and I use Low Fat sour cream and whipped toppings.Deeeelicious!

I made this for a friend's wedding reception and it was a big hit. I'm not a fan of pecans but used chopped walnuts. Very satisfying dessert!!

This is a very good dessert! The only change I would make would be to use milk instead of the fruit juice, it was too sweet for my tastes. Also, we put shredded coconut on top, delicious!

Much simpler, easier recipe for this ambrosia is: small cool whip, pistachio pudding (not cooked, just the powder), and one can crushed pineapple (including juice). For larger groups, double cool whip.

It is really yummy! However, I do agree that it makes too much of the pudding mixture. I just cut that in half and it was perfect. I also lightened it up a bit by using light whipped topping and sugar free pudding. It tasted just as delicious. I will definitely make it again!

Really good but it makes way too much of the pudding mixture. I only used about 1/3 and it was perfect. Next time I will use chunky fruit cocktail. I added sliced bananas and a few mini marshmellows would be nice too.
