Pineapple Nut Bread

1 can (8 ounces) crushed pineapple
2 cups all-purpose flour
3/4 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup milk
1/4 cup butter, melted
1 cup chopped walnuts

small mixing bowl, combine the pineapple, reserved juice, egg, milk
and butter; mix well. Stir into the dry ingredients just until
moistened. Stir in walnuts. Pour into a greased 8-in. x 4-in. loaf
pan. Bake at 350° for 55-60 minutes or until a toothpick inserted
near the center comes out clean. Cool for 10 minutes before removing
from pan to a wire rack to cool completely.

Yield: 1 loaf.
