Ingredients

  • 2 cups coleslaw mix
  • 1 cup unsweetened crushed pineapple, drained
  • 1/3 cup shredded carrot
  • 3 medium radishes, shredded
  • 1/4 teaspoon celery seed
  • 1/3 cup mayonnaise

Directions

  • In a large bowl, combine the first five ingredients. Add mayonnaise and toss to coat. Cover and refrigerate until serving. Yield: 4 servings.

Nutritional Analysis: 3/4 cup (prepared with fat-free mayonnaise) equals 66 calories, 1 g fat (trace saturated fat), 2 mg cholesterol, 173 mg sodium, 15 g carbohydrate, 2 g fiber, 1 g protein. Diabetic Exchanges: 1 vegetable, 1/2 fruit.
