Pineapple Baked Beans

Quick Cooking

Sweet and tangy pineapple dresses up these hearty baked beans, from Gladys De Boer of Castleford, Idaho. "Brown the beef while you open cans and chop the vegetables, and it won't take long to get this ready for the slow cooker."

TIME: Prep: 10 min. Cook: 4 hours

Ingredients:

  • 1 pound ground beef
  • 1 can (28 ounces) baked beans
  • 1 can (8 ounces) pineapple tidbits, drained
  • 1 jar (4-1/2 ounces) sliced mushrooms, drained
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 1/2 cup barbecue sauce
  • 2 tablespoons soy sauce
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions:

In a skillet, brown beef; drain. Transfer to a 5-qt. slow cooker. Add remaining ingredients and mix well. Cover and cook on low for 4-8 hours or until bubbly. Serve in bowls. Yield: 6-8 main-dish or 12-16 side-dish servings.
