Pina Colada Pudding Cups Recipe
  • Prep: 15 min. + chilling
  • Yield: 8 Servings

Ingredients

  • 3 cups fat-free milk
  • 2 envelopes whipped topping mix (Dream Whip)
  • 2 packages (1 ounce each) sugar-free instant vanilla pudding mix
  • 2 cans (8 ounces each) unsweetened crushed pineapple, undrained
  • 1/2 teaspoon coconut extract
  • 1/4 cup flaked coconut, toasted
  • 8 maraschino cherries

Directions

  • In a large bowl, whisk the milk, whipped topping and pudding mixes for 2 minutes. Stir in the pineapple and extract.
  • Spoon 3/4 cup pudding mixture into eight dessert dishes. Cover and refrigerate for 30 minutes or until chilled.
  • Sprinkle each serving with 1-1/2 teaspoons coconut and top each with a cherry. Yield: 8 servings.

Nutritional Facts 1 serving equals 171 calories, 3 g fat (3 g saturated fat), 2 mg cholesterol, 350 mg sodium, 31 g carbohydrate, 1 g fiber, 4 g protein. Diabetic Exchanges: 1-1/2 starch, 1/2 fruit.

The only change I made was to cut the recipe in- half. It is so good!!! This is a definite keeper for us. Be sure and give it a try.

I used white chocolate sugar free instant pudding. Everything else I did exactly as the recipe states. My husband said the only thing wrong with the recipe was that it didn't make enough. He is ready for me to make more. My son usually doesn't like coconut but decided to try it and he loved the toasted coconut. This is definitely a recipe I will keep and make again and again.

Skipped the toasted coconut and used light cool whip instead of Dream Whip....but it was still a WONDERFUL dessert. Will be making it again very soon!!

The fastest way to toast coconut is by using the broiler. It only takes a few seconds. Make sure to watch the coconut closely as it will burn. Hope this helps.

Loved this recipe, omitted the toasted coconut as I had none on hand, but still was delightful. Sliced some banana on top and had for breakfast the next morning, yummy!

Whenever you see "trans fat free" on a label, you should look at the ingredient list. If you see "partially hydrogenated oil", that is trans fat. If you see "hydrogenated oil", that is most probably trans fat. If you see "fully hydrogenated oil", that is supposed to be very low in trans fats.

If it were 'fully' hydrogenated, don't you think they would say so, to eliminate doubt? Yep. The fact that they don't speaks volumes.

I made this and used 1/2 of the recipe. I used a whole tub of cool whip but next time will cut it down to half. Didn't have any coconut extract and it was still very good.

I made this receipe the other day. It was very tasty and is something a diabetic can use as an exchange. It made a large dessert which would be great to take to a potluck or a get together.

Made this over the weekend using 1/2 container of lite cool whip folded into pudding mixture instead of dream whip.Flavor was really good but if using cool whip cut down on the amount of milk as mine was a little runny but not to much it was still really good.

This tastes wonderful. However, I found it to be a little runny, so the next time I make it, I am reducing the amount of milk by 1/2 cup. If it still is a little runny, I will reduce the amount of milk by another 1/2 cup. Over all, everyone that the dessert loved it.

I made this recipe while camping over the weekend. It was quick and easy to make (especially important since our only "refrigeration" was a cooler), and absolutely delicious. My fellow campers raved over the taste (even our most picky eater)!

Hydrogenated oils are not trans..only partially hydrogenated are. If an oil is fully hydrogentate, it is not "broken apart" which is what trans means.

Read your labels! Cool Whip Free has Hydrogenated oils which are TRANS FATS.

This really sounds good. I will definitly use Cool Whip. If you buy the Cool Whip Free there is no fat at all in it. Even the Cool Whip Lite only has 1 gram of sat. fat and no trans fat.

What is the best way to toast coconut with out turning your oven on for to long?

I can't eat anything with artificial sweeteners, except splenda, in it, so I would make home made vanilla pudding and use cool whip instead of dream whip. This sounds like something my husband would love to eat. He loves pineapple and coconut.

you can sub coolwhip for the whipped topping mix. Just fold it into the pudding after making it.
