Pina Colada Fruit Salad Recipe

Ingredients

  • 1-1/2 cups green grapes
  • 1-1/2 cups seedless red grapes
  • 1-1/2 cups fresh blueberries
  • 1-1/2 cups halved fresh strawberries
  • 1 can (8 ounces) pineapple chunks, drained
  • 1/2 cup fresh raspberries
  • 1 can (10 ounces) frozen non-alcoholic pina colada mix, thawed
  • 1/2 cup sugar
  • 1/2 cup pineapple-orange juice
  • 1/8 teaspoon almond extract
  • 1/8 teaspoon coconut extract

Directions

  • In a serving bowl, combine the first six ingredients. In a small bowl, whisk the pina colada mix, sugar, juice and extracts until sugar is dissolved. Pour over fruit; toss to coat. Chill until serving. Yield: 9 servings.

Nutritional Facts 3/4 cup equals 196 calories, 2 g fat (1 g saturated fat), 0 cholesterol, 12 mg sodium, 46 g carbohydrate, 2 g fiber, 1 g protein.

I've also made this twice for Pot Lucks and it had great reviews. I also used just the Pina Colada with no sugar or additional juices. Right before serving I poured off excess dressing so it doesn't sit in bottom of bowl. I didn't add the pineapple until shortly before serving; when left overnight it took on the red color from berries, did anyone else have that problem?

Made this for a family gathering and it was a hit! Kids loved it as did the adults!! Everyone asked for the recipe.

Made this without sugar also. Used prepared pina colada mix, approx 1/2cup. It was a big hit.

Awesome salad! I also omit the added sugar. I have done this salad with a variety of melons, strawberries and blackberries. The last time I went to make it, I didn't have pina colada mix wo I substitued margarita mix. It was really good.

OMG this is wonderful !!! I also left out the sugar , it's sweet enough without . My granddaughter-in-law and I eat this for breakfast and a late night snack . It's sooo good . And leaving off the sugar makes it less than 196 calories a 3/4 cup .

The added sprinkling of green on top is indeed fresh mint! Makes it pretty and adds a little zing to the salad.
