Pina Colada Fruit Salad Recipe

Ingredients

  • 1-1/2 cups green grapes
  • 1-1/2 cups seedless red grapes
  • 1-1/2 cups fresh blueberries
  • 1-1/2 cups halved fresh strawberries
  • 1 can (8 ounces) pineapple chunks, drained
  • 1/2 cup fresh raspberries
  • 1 can (10 ounces) frozen non-alcoholic pina colada mix, thawed
  • 1/2 cup sugar
  • 1/2 cup pineapple-orange juice
  • 1/8 teaspoon almond extract
  • 1/8 teaspoon coconut extract

Directions

  • In a serving bowl, combine the first six ingredients. In a small bowl, whisk the pina colada mix, sugar, juice and extracts until sugar is dissolved. Pour over fruit; toss to coat. Chill until serving. Yield: 9 servings.

Nutritional Facts 3/4 cup equals 196 calories, 2 g fat (1 g saturated fat), 0 cholesterol, 12 mg sodium, 46 g carbohydrate, 2 g fiber, 1 g protein.

Great recipe! I made one change to the recipe. Instead of buying a Pina Colada drink mix, I used 1 c. of pineapple juice combined with 1 c. of Cream of coconut. Not only was it a little healthier, I think it tastes just as good.

This was good, but will not put the extracts in next time. They overpowered the fruit. Not sure if it was a keeper yet.

What a great fruit salad! All you need to do is buy a bunch of fruit, add a few extras and mix it all together. I'm not a huge fan of coconut, but still loved this. It was a big hit with the family.

Followed the advice of everyone and left out the sugar and poured the dressing over the fruit before serving. It was the first thing my dinner guests commented on. They LOVED it and so did we. Definitely a keeper.

This is a very tasty salad! I took the sweet-meter one step higher by mixing the dressing with a box of instant vanilla pudding. Wow! Sweet? yes...delicious? yes. I didn't add the sugar and put about a quarter of the dressing on the salad (as other reviewers suggested). The pudding I served as a "topping". The salad was great and the topping was a yummy experiment.

I only gave it 4 stars because, inexplicately, none of the kids liked the salad. Crazy kids!

My daughter's idea: mix the dressing and serve on the side allowing guests touse as they desire. Works great and keeps the fruit from getting soft.

Delicious! Washed the fruit and made the dressing well in advance (left out 1/2 c sugar), chilled all in the fridge. 10 min before serving I mixed it together, adding toasted flaked coconut and fresh minced mint, chilled again until we ate. Next time would only make 1/2 the dressing as there is plenty. We loved this salad and so did our friends! Keeper!

Wow! What wonderful flavor. I made this for a summer party. I enjoyed sitting back and watching people put it into their mouths the first time. They had this strange looks, like "wow, what is on this fruit?!" Everyone loved it! I can't stay out of it. I hope my husband gets rid of the juice before I hold the bowl up to my mouth and drink it!

The flavor of this fruit salad is refreshingly different. If I make it again, I will add only about 1/2 of the can of pina colada mix and will probably not add any additional sugar. The leftover mix went down the drain since the fruit was completely drenched in the liquid and, swimming in all of the extraneous juices, did not look very appetizing to my family.

I've also made this twice for Pot Lucks and it had great reviews. I also used just the Pina Colada with no sugar or additional juices. Right before serving I poured off excess dressing so it doesn't sit in bottom of bowl. I didn't add the pineapple until shortly before serving; when left overnight it took on the red color from berries, did anyone else have that problem?

Awesome salad! I also omit the added sugar. I have done this salad with a variety of melons, strawberries and blackberries. The last time I went to make it, I didn't have pina colada mix wo I substitued margarita mix. It was really good.

OMG this is wonderful !!! I also left out the sugar , it's sweet enough without . My granddaughter-in-law and I eat this for breakfast and a late night snack . It's sooo good . And leaving off the sugar makes it less than 196 calories a 3/4 cup .

Done this for 'Pot Lucks;' there were NO left overs ... tongue marks in the bowl ... yes, left overs? No.

Simplify this a tad and just get a bottle of PQLotta base mix from any store and use that as the dressing.

What a great refreshing salad, I have made this twice already.

JO4-the green "chips" as you call it -seen in the picture is no doubt chiffonaded mint. That is rolled up leaves of the mint that is sliced thin and added often to salads, drinks or as a simple garnish.

I have to be careful with sugar so I used Splenda (3 to 4 envelopes) instead. Maybe next time I'll let the natural sugars do it for me.

Dear Terry,

I am pretty sure the little green things are chopped mint.  Being part Lebanese we use mint in a salad called Tabouli and I have added chopped mint to fruit before and it adds a nice flavor to it, but use fresh mint.

Sounds wonderful! I have not made it yet, but I think I will, and very soon!! To me, the green strips in the photo look like coconut that has been colored with green food coloring. It would make sense to me that it would be coconut as it's a Pina Colada recipe....

I made this for a family memorial day picnic that we are attending today. It is a really good tasting salad and am hoping all members of family like it. The only change

I made - instead of buying pineapple/orange juice (for 1/2 cup), I mixed some of the canned pineapple juice (from the pineapple called for) with orange juice to total 1/2 cup. Worked fine.

This was delicious, everyone loved it. I took the advice of several reviewers and did not add the sugar. I also only used about a 1&1/3 cup of coating, which was plenty and I'd even use less next time. The raspberries got a little soggy, but still tasted great. It was gone from a group of 6 people at a dinner get-together and was an easy treat to bring. :)

I doubled the recipe, did not use any sugar and used pineapple extract instead of the almond and coconut extracts. The fruit seemed to be drowning in the sauce, so next time I might double the fruit, but not the sauce ingredients. Still very good flavor!

Any summer fruit will work in this yummy fruit salad. Since coconut is not a favorite flavor in my home, I substituted the pina colada concentrate with pinapple-strawberry concentrate, and used regular oragnge juice rather than pinappe-orange. I eliminated the coconut extract, sticking with the almond extract alone. As other members suggested, I left out the 1/2 cup sugar. Because it's easy, light, and delicious, I've used this dish for picnics, pot lucks, and as a side dish for an all inclusive entree, like chicken pot pie.

Made this for a baby shower, and it was a hit. I used about 1/8 cup of sugar, added about 1/3 cup flaked coconut, and just used fruit that was in season/cheaper. This was delicious. It did get quite soggy after a little while, could have been the types of fruit I chose. Would not mix together until immediately before serving.

I've made this 3 times now and keep reducing the sugar -- I would not put in any sugar at all -- the fruit and the pina colada mix are PLENTY!!! I get rave reviews each time I make it. Very good and quite the crowd pleaser -- good to take to a potluck/picnic!

What a different way to serve a fruit salad. I loved the coconut flavor. I couldn't find the pina colada mix so had to go for the alchol type. Still tasted pretty good. I might put some coconut flakes in just to see if it gets better

This was an AWESOME tasing fruit salad! Not your ordinary fruit salad! I used 1/2 the sugar and added about 3/4- 1 cup of flaked coconut and that gave it an extra tropical flavor. The cocnut rum mentioned above also sounds like a great idea! Maybe I'll do that next time! ;-)
