Picnic Cupcakes Recipe

Ingredients

  • 1 package chocolate or yellow cake mix (regular size)
  • FILLING:
  • 1 package (8 ounces) cream cheese, softened
  • 1 egg, lightly beaten
  • 1/3 cup sugar
  • 1 cup (6 ounces) semisweet chocolate chips

Directions

  • Prepare cake mix batter according to package directions for cupcakes. Fill 24 paper-lined muffin cups two-thirds full.
  • In a small bowl, beat the cream cheese, egg and sugar until smooth. Fold in chips.
  • Drop by tablespoonfuls into batter. Bake at 350° for 20 minutes or until a toothpick inserted in the cupcake comes out clean. Yield: 24 servings.

me and my niece made these they r simple to make u already have the ingredients at home u can take them on picnics with out having the mess of icing everywhere and they r delicious!!!!!! these will b made at my house a lot during the summer

Made these cupcakes using a dark chocolate cake mix and only revised it by chopping up

Swiss delice (32% cocoa pieces) instead of

chocolate chips. Turned out lite, kept shape

during travel and were enjoyed by all.
