Pesto Grilled Salmon

Ingredients
- 1 salmon fillet (3 pounds)
- 1/2 cup prepared pesto
- 2 green onions, finely chopped
- 1/4 cup lemon juice
- 2 garlic cloves, minced
Directions
- Using long-handled tongs, moisten a paper towel with cooking oil and
- lightly coat the grill rack. Place salmon skin side down on grill
- rack. Grill, covered, over medium heat or broil 4 in. from the heat
- for 5 minutes.
- In a small bowl, combine the pesto, onions, lemon juice and garlic.
- Carefully spoon some of the pesto mixture over salmon. Grill 15-20
- minutes longer or until fish flakes easily with a fork, basting
- occasionally with remaining pesto mixture. Yield: 12 servings.
