Peppermint Meltaways Recipe
  • Prep: 30 min. Bake: 10 min./batch + cooling

Ingredients

  • 1 cup butter, softened
  • 1/2 cup confectioners' sugar
  • 1/2 teaspoon peppermint extract
  • 1-1/4 cups all-purpose flour
  • 1/2 cup cornstarch
  • FROSTING:
  • 2 tablespoons butter, softened
  • 1-1/2 cups confectioners' sugar
  • 2 tablespoons 2% milk
  • 1/4 teaspoon peppermint extract
  • 2 to 3 drops red food coloring, optional
  • 1/2 cup crushed peppermint candies

Directions

  • In a small bowl, cream butter and confectioners' sugar until light and fluffy. Beat in extract. Combine flour and cornstarch; gradually add to creamed mixture and mix well.
  • Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until bottoms are lightly browned. Remove to wire racks to cool.
  • In a small bowl, beat butter until fluffy. Add the confectioners’ sugar, milk, extract and, if desired, food coloring; beat until smooth. Spread over cooled cookies; sprinkle with crushed candies. Store in an airtight container. Yield: 3-1/2 dozen.

Nutritional Facts 1 cookie equals 90 calories, 5 g fat (3 g saturated fat), 13 mg cholesterol, 36 mg sodium, 11 g carbohydrate, trace fiber, trace protein. Diabetic Exchanges: 1 fat, 1/2 starch.

These are our favorite Christmas cookie! A big hit at cookie exchanges.

They really do melt in your mouth. I used a little more peppermint extract this year, we liked the stronger flavor.

These cookies were awesome! They are very easy and quick to make. This will definitely be on my list of cookies to make all year long. I used vanilla flavoring in one bath and it was also great. The frosting was perfect. I used red and green sugar with the peppermint and they defintely do melt in your mouth. Only problem is you can't eat just one!

I made these cookies 8 yrs ago. I lost the recipe when we moved to another house. I'm so glad I got it back. These cookies are wonderful. It's the first cookies my husband liked that wasn't a soft chewy cookie. I had to make another batch to give out because he ate them all. Thank you for still having this recipe.

My cookies came out perfect and we live at high altitude. Cooked for 12 min. instead of 10. I cheated and used Pillsbury frosting in a squirt can, still delicious. Fun for kids to make!

I've made peppermint cookies before and never had much luck really liking them. I love peppermint but just couldn't find a recipe that worked for me until this one... The entire family LOVED them... So easy and soooo good.

these Peppermint Meltaways are so good I make a double batch every year!

I use red, green & white candy canes, so pretty & so delicious!

They freeze well as well & yes, they melt in your mouth!

Very good cookies and very festive!! I was a little concerned because i felt that the dough was a little bland, but it paired wonderfully with the frosting! It really offset the sweet frosting perfectly. And they really do melt in your mouth! Would definitely recommend.

I made these last night for my works bake sale and they were a HIT!! The biggest advice i have (if you are not a "baker", like myself) is to research how to correctly "cream butter and confectioners' sugar" which is the first step in the recipe. That is what will keep them from going flat!

Is that amount of cornstarch really right? I would have expected two tablespoons, max.

I would not make these again. They came out as flat as pancakes and there is no flavor to them at all. I had to add an additional cup of powdered sugar to the batter to offset the strong taste of cornstarch.

Don't let these sit too long after making them. They are delicious when fresh, but time takes the flavor away. About 4 days and they are done.

Try using parchment paper. You also might want to refrigerate them for a couple hours before you roll them. YUMMM!

This recipe can be changed to any flavor of extract you have in the house. I made lemon ones and plan to make the almond ones next. Very good! One word of advice I didn't put in my last review...use parchment paper. A perfect cookie every time!

i was having trouble rolling into a ball so i put in refrigerator for a bit and that helped a ton! an amazing delicate cookie, would make a good gift pared with hot cocoa mix , or next to your favorite fudge,,, will def make again!

I made one batch to see how they were, as there were mixed reviews. These are excellent. Everyone loved them. I don't know what some were expecting. Not all cookies are chewy and gooy. These remind me of what you would have at a fancy tea party or something. Very cute cookies. The 7yr. old said they were the best of the new cookies we tried this year. I will be making another batch today.

I've made this recipe twice. It is very tasty. The first time I put red food coloring in and made the frosting too runny. The second time I made it thicker and put green food coloring in. They are very pretty and festive and EASY!!! The only comment from my son was they had a very minty flavor...next time I will hold the extract out of the frosting.

Yummy, pepperminty, my extract got away from me a little and into the dough, still good. melty and super easy. The frosting is good and pipes well. I would even swap for vanilla extract and put it on sugar cookies, It stiffens but still melts with the cookie.

Amazingly light! These cookies are not overly sweet, so perhaps that is one reason some people don't care for them. They are, however, a perfect counterpoint to some of the decadent cookies I include for gifts to friends and family. I will absolutely continue to make these again!

Looks like ToH had discarded a lot of old reviews. I reviewed these once and it is no longer posted - but I could only choose 2 starts today - must be my old review! We did not like these at all. They were pasty and oily. Not worth the calories.
