set aside. In a large mixing bowl, beat oil and sugar until blended. Beat in vanilla. Add eggs, one at a time, beating well after each addition. Combine the flour, cocoa, baking powder and salt; gradually add to creamed mixture. Set aside 2 tablespoons peppermint candy for garnish; stir remaining candy into creamed mixture. Spread into prepared pan. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. For glaze, in a microwave, melt chocolate chips and shortening; stir until smooth. Spread over brownies; sprinkle with reserved candy.
Yield: 2 dozen.
