Meet the Cook: While these are delicious year-round, you could easily turn them into an edible Christmas gift. They look festive on a decorative tray wrapped in red or green cellophane or tucked into a giveaway cookie plate. Big Batch Baked GoodsWe enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

I struk out with these for some reason. My excuse is that I didn't include any alterations for high altitude. 22 minutes turned out way too long and instead of rising the muffins sunk to the bottom. Dang.

I did modify the butter down to 1/2 cup .
Taste pretty much like a pecan pie. We love them.

These were so easy to make. I didn't have mini muffin pans so I used regular muffin pans. I also doubled the recipe. These muffins were great!!! We all loved them. A friend that doesn't even like Pecan Pie loved them. Will definitely make these again.

We love these! I spray the muffin tin with no stick spray but then use sugar instead of flour. They are absolutely delicious!

My family LOVES these little muffins!! I also take them to potlucks, and use them as Christmas treats. They always bring tons of compliments, and requests for the recipe.
