Pecan Delights Recipe
  • Prep: 15 min. + chilling Cook: 1 hour + cooling
  • Yield: 48 Servings

Ingredients

  • 2-1/4 cups packed brown sugar
  • 1 cup butter, cubed
  • 1 cup light corn syrup
  • 1/8 teaspoon salt
  • 1 can (14 ounces) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1-1/2 pounds whole pecans
  • 1 cup (6 ounces) semisweet chocolate chips
  • 1 cup milk chocolate chips
  • 2 tablespoons shortening

Directions

  • In a large saucepan, combine the first four ingredients. Cook over medium heat until all sugar is dissolved. Gradually add milk; mix well. Continue cooking until a candy thermometer reads 248° (firm-ball stage).
  • Remove from the heat; stir in vanilla until blended. Fold in the pecans. Drop by tablespoonfuls onto a greased or parchment-lined baking sheets. Chill until firm. Loosen from paper.
  • Melt chocolate chips and shortening in a microwave-safe bowl. Drizzle over each cluster. Cool. Yield: about 4 dozen.

Editor's Note: We recommend that you test your candy thermometer before each use by bringing water to a boil; the thermometer should read 212°. Adjust your recipe temperature up or down based on your test.

Excellent and easy recipe but it makes closer to 90 turtles than the 48.

I made these last year for a christmas gift for a friend. She thought I had bought them at a candy store. I toasted the pecans for that extra crunch. These are easy, delicious, and impressive gifts if you can bear to part with them!

WOW...are these yummy!! This is the first time I had made candy and it was surprisingly easy. Made them for our church's High Tea and they were a hit. I melted the chocolate in a double boiler and added double the shortening to get a finer drizzle. Sooooo good!!
