Pecan Butterscotch Cookies Recipe

Ingredients

  • 1 cup complete buttermilk pancake mix
  • 1 package (3.4 ounces) instant butterscotch pudding mix
  • 1/3 cup butter, melted
  • 1 egg
  • 1/2 cup chopped pecans, toasted

Directions

  • In a large bowl, beat the pancake mix, dry pudding mix, butter and egg until blended. Stir in pecans.
  • Roll into 1-1/2-in. balls. Place 2 in. apart on greased baking sheets. Flatten with the bottom of a glass. Bake at 350° for 8-10 minutes or until edges begin to brown. Remove to wire racks to cool. Yield: about 1-1/2 dozen.

    Editor's Note: You may substitute regular biscuit/baking mix for the complete buttermilk pancake mix.

I followed the recipe just as it stated and while the cookies were soft and chewy, they had no flavor and a bad after taste. Definitely a fail and I won't be making these again.

I truly wish I had read ALL of the reviews before I mixed a double batch of these cookies. I took one bite and felt like I had a mouthful of pancake mix. I'm truly glad I didn't waste my box of pumpkin spice instant pudding mix.

Although the photo of these cookies appears as if these are a crunchy buttery cookie mine were different, but very very good. I am camping and only have access to a countertop oven. I didn't have a small enough cookie sheet to bake as directed so I used a mini muffin pan. I also substitued low fat Bisquick mix and used mini chocolate chips instead of the pecans. I mixed the batter/dough the day before baking (kept it in the fridge) until ready to bake. I rolled into one inch balls and placed in the muffin tin. I baked at 350 for 13 minutes. The tops cracked beautifully and the texture was a muffin, not a cookie. But still awesome. i will be interested to find the Next time I make these (at home) with the cookie sheet if they are a buttery crispy cookie as the photo appears. For those that have made this cookie on the cookie sheets are they a crunchy cookie with a buttery crumb or a soft cake like cookie? Thanks!

Like a lot of people said,the recipe is so easy.I didn't have butterscotch pudding so I used vanilla and chopped some toasted hazelnuts and also used some mini chocolate chips to equal 1/2 cup.It was great.I am going to try it next time with all the ingredients the way the recipe reads.Can't understand anyone who rated it poorly.

So easy & so yummy. My problem is not eating them all before my family gets any! Can't figure what others had a problem with. I did add chocolate chips.

After reading all the negative & positive reviews, just had to try one batch. I used buttermilk pancake mix, regular butterscotch pudding, rolled the dough into balls & flattened with sugar coated glass bottom. They were lovely...thank you for sharing.

To CeeJay~~~ You would use only 1 sugar free pudding mix. The weight in a box of regular pudding mix would result, primarily from the weight of the sugar as the sweetener. Sugar Free uses artificial sweeteners which are less volume & lighter by weight. Hope this helps. I plan to try these cookies. They sound so good & quick & easy.

Can these be made with sugar free butterscotch pudding mix? The sugar free mixes are 1 oz so guess I will need 3 boxes. Will this work??

I'm confused by all the complaining regarding this recipe. I tried the recipe as written, and thought they were super easy to make and had a Fabulous taste!! My whole family really really loved them. I am putting them on my annual Christmas cookie list---if I can wait that long to make them again. :)

This could possibly be the worst cookie I ever tasted. I too ended up thowing the whole batch in the trash but only after my husband made fun of them. What a waste of time and money! Really Taste of Home, I expect better!!!!

I baked these cookies tonight and after tasting the first one, I threw the entire batch in the trash.  They are the worst cookies I have ever made - and I have been cooking and baking for over 50 years!  I agree with the majority of the posts on this recipe - they are terrible!  There is no 'cookie' taste or texture to them.  They may be quick and cheap to make - but if they don't taste good - what's the point?  I don't think I have EVER made a recipe from any of your magazines (and I subscribe to several) that I was not completely pleased with - but this one has gone to my shredder.

I have to agree with the majority of those posting - I threw out all these cookies - well, all but the one I tasted. They had no sweet 'cookie' taste at all-not anything I would ever serve to guests. I have shredded the recipe.

Again, I am so sorry to hear of your disappointment with the Pecan Butterscotch Cookies. As you may be aware, we test every recipe published in Simple & Delicious in our Test Kitchen. After we saw this post, we retested this recipe three different ways because there can be some confusion regarding the mix that was called for in the recipe. We tried the cookie using one of the ingredients (below) for the 1 cup complete buttermilk biscuit mix in the ingredient list:

1 cup complete buttermilk pancake mix

1 cup biscuit/baking mix (regular Bisquick) -complete just add water

1 cup from the (7.5 oz) pouch complete Bisquick Biscuit Mix - Buttermilk  flavor

Our findings:

The cookies tasted similar regardless of the product we used, and all of the products performed well in the Test Kitchen. We liked the buttermilk pancake mix the best, as it gave the cookie a slightly sweeter flavor. The ingredient in the recipe has been changed from 1 cup complete buttermilk biscuit mix to 1 cup complete buttermilk pancake mix.

The dough was moist and held together better through rolling verses dropping by a tablespoon. The method has been changed to: Roll into 1-1/2-in. balls. Place 2 in. apart on greased baking sheets.                                              

If a slightly sweeter taste cookie is desired, we suggest dipping the glass in sugar before flattening the dough balls.

In summary, we thought the recipe was a clever use of five ingredients to make a quick, pecan butterscotch cookie.

I too tried the cookies and was quite excited to try them and they were AWFUL!!!! I am glad I didn't double the batch because I threw out 8 of the 12. My husband thought I made the dog cookies. I think they forgot something.

I made these cookies tonight.  I can't print here what DH's comment was.  Let's just say they might be the most awful homemade cookies he ever ate.  Seriously, folks - this recipe was a waste of ingredients.  Glad it didn't make many cookies.  I'll shred this recipe.
