Pecan Apple Pancakes Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground mace
  • 1/2 teaspoon ground cloves
  • 2 eggs
  • 1-3/4 cups buttermilk
  • 3 tablespoons canola oil
  • 1-3/4 cups shredded peeled apples
  • 1/2 cup chopped pecans

Directions

  • In a large bowl, combine the first nine ingredients. In another bowl, combine the eggs, buttermilk and oil; stir into dry ingredients just until blended. Stir in apples and pecans.
  • Pour batter by 1/4 cupfuls onto a greased griddle over medium-low heat. Turn when bubbles form on top; cook until second side is golden brown. Yield: 1-1/2 dozen.

Nutritional Facts 1 serving (2 each) equals 323 calories, 11 g fat (2 g saturated fat), 49 mg cholesterol, 425 mg sodium, 50 g carbohydrate, 2 g fiber, 7 g protein.

I would cut back on the cloves a bit.

I'm really not a pancake person, but these are so de-LISH! They smell and taste like... Christmas. I think they're perfect just the way they are. It's a great combination of spices. My family and I love them with buttermilk syrup. Highly recommend this recipe.

These pancakes are delicious, but much too sweet with a whole cup of sugar, esp if you want to put syrup on top! I would try to use maybe a half cup of sugar next time. I also like to use part whole wheat flour to maximize the nutritional value. Definitely will make again, but using my alterations.
